1 cup soda (or saltine) crackers (crushed)
1/2 cup milk
1/2 cup sugar
3 eggs
3 tablespoons flour
3 tablespoons butter (melted (or bacon grease, see notes above))

Steps:

  • Preheat oven to 350-degrees.
  • Combine all ingredients in a large bowl, mix well.
  • Pour mixture into a greased 9x13 glass baking dish.
  • Bake for 1 - 1 1/2 hours or until cooked through and golden brown on top.
  • Tip: If you like it more bready, bake longer. It will become more like a cornbread. If you like it more like a corn pudding, bake for less time.

Great family recipe I am asked to make at every family function. The twist is I use Mexican cornbread mix instead of regular cornbread mix.

3 eggs, beaten
1/2 cup butter, melted
8 ounces sour cream
1 (7 ounce) package Mexican cornbread mix (I use Martha White)
1 (14 3/4 ounce) can creamed corn
1 (15 1/4 ounce) can whole corn, drained
1 (16 ounce) bag colby-monterey jack cheese, shredded

Steps:

  • Preheat the oven to 375 degrees. Also spray a 9 x 11 cooking dish with cooking spray.
  • In a large bowl, beat 3 eggs. Add 1 stick melted butter and sour cream. Blend well. Add mexican cornbread mix and blend well. Next add cream corn and whole corn and blend well. Finally add bag of shredded cheese and mix well.
  • Once all is blended in, pour mixture into cooking dish and place in the oven for 30 minutes. Can check with a toothpick to make sure the center is cooked.

1/2 cup onion, chopped fine
1 (2 ounce) jar chopped pimento pepper, drained
1 (4 ounce) can diced green chilies, drained
1 cup milk
2 eggs, slightly beaten
1 cup yellow cornbread mix
1 cup cheddar cheese, shredded
1/4 cup canola oil
2 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°F; grease a large casserole dish.

1 can (14.75 oz) Creamed Corn
8 oz Cornbread Mix (We use Whole Foods 365 Cornbread & Muffin Mix)
2 Eggs, beaten
1 cup Sour Cream
¼ cup Unsalted Butter, melted
1/8 cup Avocado Oil

Steps:

  • Preheat oven to 350 degrees F. Spray your Ramekins with a non-stick cooking spray (we use Avocado Oil spray).
  • Melt Butter in a microwave safe bowl, set aside.
  • In a large mixing bowl, beat Eggs and Sour Cream together.
  • Add Whole Corn, Creamed Corn, Avocado Oil, and Butter to mixing bowl. Combine well.
