- FOR THE PIE:.
- Preheat oven to 375 degrees F.
- Peel & slice peaches.
- Mix peaches with other filling ingredients.
- Pour into an unbaked 9"-10" deep dish pie shell.
- Bake about 30 minutes, until pie is slightly brown.
- While pie is baking, prepare the topping.
- FOR THE TOPPING:.
- Blend cold butter, sugar, flour & cinnamon with pastry cutter, until crumbs are the size of small peas.
- Sprinkle topping evenly over pie, & bake another 15 minutes.
- Cool to room temperature, then chill in refrigerator before serving.

- Preheat the oven to 350 degrees F. Line a 9-inch pie plate with one of the pie crusts.

- Preheat oven to 400°F Prepare pie crust as directed on package for two-crust pie, using a 9-inch pie plate.
- Mix sugar, cornstarch and apple pie spice in large bowl. Add peaches; toss gently. Spoon mixture into pastry-lined pie plate. Top with second pie crust. Seal and flute edge. Cute small slits in top crust.
- Bake 50-60 minutes or until crust is golden brown and filling is bubbly. Cool on wire rack.
- After 15-20 minutes of baking , cover edge of crust with strips of foil to prevent excessive browning.
Tips:
- For the best flavor, use fresh, ripe peaches. If using frozen peaches, thaw them completely before using.
- To easily peel peaches, score an "X" on the bottom of each peach and place them in boiling water for 30 seconds. Remove from water and immediately transfer to an ice bath. The skins will slip right off.
- If you don't have a pie crust mix on hand, you can make your own using this recipe: 1 1/2 cups all-purpose flour, 1/2 teaspoon salt, 1/2 cup (1 stick) unsalted butter, cold and cut into small pieces, and 1/4 cup ice water.
