12 large eggs
4 1/2 tablespoons mayonnaise
1 tablespoon prepared yellow mustard
2 teaspoons Dijon mustard
4 tablespoons sweet pickle relish
Salt
Pepper
Paprika

Steps:

  • Place eggs in a large pot and cover with cold water. Bring water to a boil, then cover pot and remove from heat. Let eggs sit for 10-15 minutes then rinse under cold water and peel.
  • Slice in half and remove yolks. To yolks, add mayonnaise, mustard, relish, salt and pepper. Mash together with a fork.

7 large eggs, hard boiled and peeled
1/4 cup mayonnaise
1 1/2 tablespoons sweet pickle relish
1 teaspoon prepared mustard
salt, to taste
pepper, to taste
paprika, for garnishing
sweet gherkin, sliced for garnishing
pimiento, for garnishing

Steps:

  • Halve 7 eggs lengthwise. Remove yolks and place in a small bowl.
  • Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard. Add salt and pepper to taste.
  • Fill egg whites evenly with yolk mixture.
  • Garnish with paprika, pickles and pimentos.

1/4 cup mayonnaise (do not use Miracle Whip)
3 tablespoons yellow mustard
1 tablespoon pickle relish, sweet (your choice) or 1 tablespoon dill (your choice)
1 teaspoon apple cider vinegar
2 teaspoons vidalia onions, finely diced
cayenne pepper
salt
pepper
1 teaspoon paprika

Steps:

  • Hard boil eggs. I place the eggs in cold water in a pot, bring it to a boil and continue to boil for 2 minutes. Then I remove from heat and cover for 7 minutes. Rinse under cool running water to keep the yolk from turning dark. Tap the eggs to make peeling easier, and peel them while they are still warm. Cut them in half lengthwise, placing the yolk in a separate bowl.
  • Place the egg yolks, mayonnaise, mustard, pickle relish, apple cider vinegar, onion, and cayenne, salt and pepper to taste in a bowl. Mix well.
