1 cup shredded reduced-fat Mexican cheese blend
1 can (4 ounces) chopped green chilies

8 lasagna noodles, cooked and drained
1 jar (16 ounces) salsa

1-1/2 pounds ground beef
1 medium onion, chopped
1 can (15 ounces) enchilada sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (2-1/4 ounces) sliced ripe olives, drained
1 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 cup 4% cottage cheese
1 large egg
1/2 pound Monterey Jack cheese, thinly sliced
8 corn tortillas (8 inches), halved
1/2 cup shredded cheddar cheese

Steps:

  • In a large skillet, brown beef and onion until meat is no longer pink; drain. Stir in the enchilada sauce, tomatoes, olives, salt, garlic powder and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. , In a small bowl, combine cottage cheese and egg; set aside. Spread one-third of the meat sauce in a greased 13-in. x 9-in. baking dish. 1 1/2 lbs ground beef
2 tablespoons taco seasoning mix
1/2 teaspoon seasoning salt
1 (14 1/2 ounce) can diced tomatoes
2 (8 ounce) cans tomato sauce
1 (4 ounce) can diced green chilies
16 ounces cottage cheese, pureed
1 large egg, beaten
2 cups shredded colby-monterey jack cheese, divided
1/2 cup sliced olive

Steps:

  • Cut each tortilla into 2 or 3 pieces; set aside.
  • Brown ground beef in a large skillet until crumbly; drain fat.
  • Add seasonings, tomatoes, tomato sauce, and green chiles to the skillet; stir and bring to a boil; reduce heat and cook for 5 minutes.
  • Combine cottage cheese, egg, and 1 1/3 cups of the shredded cheese in a separate bowl.
