4 teaspoons dried minced onion
2 teaspoons ground cumin
1 teaspoon cornstarch
1 teaspoon chili powder
1 teaspoon dried minced garlic
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
6 bone-in pork loin chops (about 3/4 inch thick and 7 ounces each)
1/4 cup barbecue sauce
2 tablespoons lemon juice

Steps:

  • In a small bowl, combine the first eight ingredients; rub over pork chops. In a large resealable plastic bag, combine barbecue sauce and lemon juice; add pork chops. Seal bag and turn to coat; refrigerate for 1-2 hours., Discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. 4 bone-in center-cut pork loin chops, 3/4 inch thick (about 2 lb)
1/2 tsp salt
1 tsp mexican seasoning
1/2 c salsa
1 c frozen whole kernel corn
2 can(s) (15 oz each) pinto beans, drained, rinsed
chopped fresh cilantro, if desired

Steps:

  • 1. Heat 12-inch nonstick skillet over medium-high heat. Sprinkle pork chops with 1/4 teaspoon of the salt and 1/2 teaspoon of the seasoning. Cook pork chops in skillet 4 to 6 minutes, turning once, until brown.
  • 2. In 3- to 4 1/2- quart slow cooker, mix remaining 1/4 teaspoon salt, remaining 1/2 teaspoon seasoning, the salsa, corn and beans until well blended. Top with pork chops, overlapping as necessary, pressing gently into bean mixture.

2 tablespoons taco seasoning, divided
2 cups uncooked instant rice
4 boneless pork loin chops (approx 1 pound)
1/2 bell pepper, chopped
1/4 cup green onion, sliced and divided
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can whole kernel corn, drained
1 1/2 cups shredded part-skim mozzarella cheese
sour cream, sliced black olives, salsa, cilantro, optional garnishes

Steps:

  • Preheat oven to 450 degrees.
  • Place uncooked rice in bottom of 9x9 baking dish or casserole dish with a lid. Sprinkle 1 tablespoon taco seasoning over rice.
