Categories     Appetizer     Breakfast     Brunch     Side Dish

Time 25m

Number Of Ingredients 9

1 ½ lbs Yukon Gold potatoes (or use Russet, peeled and shredded)
1 small onion (shredded)
2 large egg (whisked)
2 tbsp flour (or substitute with potato starch)
¾ tsp kosher salt (or more to taste)
½ tsp baking powder
½ cup avocado oil (or canola oil for frying)
½ cup sour cream (or yogurt)
2 tbsp fresh dill ( or chives or green onions)

Steps:

  • Preheat your oven to 250°F and line a large baking sheet with parchment paper. This is to keep your latkes warm and crisp before serving. (Optional)
  • Using either a food processor with a shredding attachment, or a hand grater, shred the potatoes and onions. If using a food processor, you might need to cut the potatoes and onions to fit properly.
  • Using a cheesecloth, nut milk bag, or clean kitchen towel, add the shredded potatoes and onions. Squeeze as much of the liquid out as possible.
  • Transfer the potatoes and onion to a large bowl. Add in the whisked eggs, flour, baking powder, and salt. Mix everything well and set the batter aside while the oil heats up.
  • Heat the oil in a large skillet over medium high heat. You will have to adjust the heat between medium/medium-high as you work to keep the oil at the right temperature. Line a large plate with paper towels to drain each batch.
  • Drop scoops of 1 1/2 to 2 tablespoons of the mixture into the skillet, cook for 1 minute, then press down gently with a spatula to flatten. It's important not to crowd the skillet to keep the oil hot. I fried mine in batches of 6 or 7 at a time.
  • Fry until golden brown on one side (about 2-3 minutes). Carefully flip with a spatula. Continue to cook until the second side is golden brown and crisp (another 2-3 minutes longer). When they're done, transfer the latkes to the paper towel-lined plate to drain briefly, then to the prepared baking sheet. Place in the oven to keep warm while you fry additional batches.
  • Repeat with the remaining mixture until used up. This rcipe should make between 22-26 depending on how large the patties are. Serve right away (or continue to keep warm in the oven) with dill, scallions or chives and sour cream.

Yield Makes 20

Number Of Ingredients 11

2 1/2 pounds baking potatoes, peeled and quartered
2 large onions, quartered (about 1 1/2 cups grated)
3 large eggs, lightly beaten
1 teaspoon baking powder
1 1/4 cups corn oil
1 cup all-purpose flour
2 1/2 teaspoons coarse salt
1/4 teaspoon freshly ground black pepper
2 cups matzo meal
Sharon's Applesauce, for garnish
Sour cream, for garnish

Steps:

  • In a food processor, finely grate potatoes (don't liquefy, leave some texture). Transfer to a colander to eliminate excess liquid. Transfer to a large bowl. Finely grate onions, and mix 1 1/2 cups into potatoes.
  • Add eggs, baking powder, 3/4 cup corn oil, flour, salt, and pepper. Stir to combine. Fold in matzo meal, blending well.
  • Heat remaining 1/2 cup corn oil in a deep skillet over low heat. With a large kitchen spoon, drop batter into pan, creating pancakes about 3 1/2 inches in diameter; be careful not to crowd them. Fry until underside is a deep golden brown, 3 to 4 minutes. Turn and fry for 1 to 2 minutes more. Repeat with remaining batter. Drain latkes on a paper towel-lined baking sheet. Serve with applesauce and/or sour cream.

PAUL'S POTATO LATKES

Paul's Potato Latkes image

Provided by Food Network

Categories     appetizer

Time 45m

Yield 4 servings

Number Of Ingredients 7

4 large Idaho potatoes (about 2 pounds total), peeled
1 small onion, peeled
1 large carrot, peeled
2 large eggs
1 tablespoon chopped fresh flat-leaf parsley leaves
Kosher salt and freshly ground black pepper, to taste
1 cup fine dry bread crumbs

Steps:

  • Preheat the oven to its lowest setting. Using either the largest holes of a hand-grater or the shredding blade of a food processor, grate the potatoes, onion, and carrot. Place the mixture in a sieve and press to remove as much liquid as possible.
  • Combine the potato mixture in a large bowl with the eggs, parsley, salt, and pepper. Using your hands or a wooden spoon mix well. Stir in 1/2 of the bread crumbs, then add the remainder slowly, stopping when the mixture is just thick enough to hold its shape, but not so loose that it dribbles off a spoon.
  • Pour oil to a depth of 1/4-inch into a large, heavy skillet and heat over medium heat until a tiny drop of the batter sizzles upon contact. Using a 1/3-cup metal measure as a scoop, ladle the batter into the hot oil in the skillet, pressing each mound of batter into a small flat pancake: do not crowd the skillet. Fry the pancakes until nicely browned on both sides, 4 to 5 minutes per side.
  • Transfer the pancakes to a platter and keep warm in the oven while you fry the remaining pancakes. Serve immediately.

LAURA'S POTATO LATKES RECIPE BY TASTY

Laura's Potato Latkes Recipe by Tasty image

Matt's mom, Laura, shows him how to make their family's most cherished recipe: latkes. She teaches him that just 4 simple ingredients can transform into a lacy, crispy and delicious side dish. Her secret is incorporating the leftover potato starch that remains in the bottom of the bowl after grating the potatoes.

Provided by Matt Ciampa

Categories     Sides

Time 50m

Yield 1 Serving

Number Of Ingredients 9

3 large russet potatoes
½ medium yellow onion
2 large eggs
kosher salt, to taste
freshly ground black pepper, to taste
1 tablespoon matzo ball mix, or more as needed
1 cup vegetable oil, plus more as needed
applesauce, for serving
sour cream, for serving

Steps:

  • Peel the potatoes, adding them to a large bowl filled with water as you work to prevent browning.
  • Dry the potatoes, then shred on the large holes of a box grater into a large. Shred the onion into the same bowl on the small holes of the box grater.
  • Transfer the potato mixture to a nut milk bag or a clean kitchen towel and squeeze tightly over the bowl to wring out any excess liquid. Set the liquid aside to let the starch settle to the bottom of the bowl, then carefully pour off the liquid on top, leaving the potato starch in the bottom of the bowl.
  • In a clean large bowl, combine the shredded potatoes and onions, potato starch, 1 egg, salt, and pepper and gently mix to combine. If the mixture seems too dry and crumbly, add another egg. Add 1 tablespoon matzo ball mix and stir to incorporate, adding up to 1 tablespoon more matzo ball mix if the mixture isn't holding together.
  • Pour the oil into a large pan to reach a depth of ¼ inch. Heat over medium heat. Using a 2-tablespoon cookie scoop, add the potato mixture to the pan, gently pressing down to the desired thickness. Add another scoop or two of the potato mixture, being careful not to overcrowd the pan. Cook for 3-4 minutes until the edges begin to crisp and the bottom is golden brown. Carefully flip the latkes and cook for another 3-4 minutes, until golden brown on the other side. Transfer to a wire rack and season with salt. Repeat with the remaining latkes.
  • Serve with applesauce and sour cream.
  • Enjoy!

MY GRANDMOTHER'S POTATO LATKES

My Grandmother's Potato Latkes image

My Grandmother used to make these every Channukah when I was a kid...I have been using her recipe to make them for my family every Channukah.

Provided by janice brady

Categories     Potato

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 7

5 medium sized potatoes
1 small onion
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons flour
2 eggs
salad oil

Steps:

  • Peel the potatoes, if your not going to use them right away, put them in a bowl and cover them with cold water.
  • Grate the potatoes into a bowl, It really doesn't matter which holes of the grater you use. Larger holes are the only ones that will do the job some people think, since they produce crunchier latkes. Others insist on using medium sized holes for smoother latkes, It's up to you, watch your knuckles though.
  • Grate the onion into the same bowl. Of course peel the skin off first.
  • Get rid of the liquid that has collected in the bowl.
  • Beat the eggs in another bowl and then add to the potato/onion mixture.
  • Add the flour, salt and pepper, Mix well.
  • Turn oven on to 250°F This is so you can keep the first latkes you fry warm while your cooking the rest.
  • Pour enough salad oil into the bottom of a large frying pan so it's about 1/4 inch deep. Heat the oil, and keep it hot at medium to medium high heat. Put a tablespoon of the batter into the oil and press it with a slotted pancake turner to a thin pancake. Do as many as these as the pan will hold. Each latke gets turned once.
  • You can tell when they're ready to turn because the edges get brown. You should cook the latkes so they're golden brown and crisp on each side. As they're done, put them in a shallow pan lined with some paper towels and keep them warm in the oven. I serve them with applesauce -- Enjoy!

CLASSIC POTATO LATKES

Classic potato latkes image

Serve these potato latkes with apple sauce, or smoked salmon with a dollop of soured cream. Traditionally made for Hanukkah, they're great all year round

Provided by Fracine Kowalsky

Categories     Breakfast, Lunch

Time 35m

Yield Makes 12 large or 24 small

Number Of Ingredients 9

4 Maris Piper potatoes, peeled
1 medium onion
2 large eggs
2 tbsp plain flour or matzoh meal
vegetable, peanut or canola oil, for frying
soured cream
smoked salmon
finely chopped chives
apple sauce

Steps:

  • Coarsley grate the potatoes and onion into a large bowl, or use a food processor with a coarse grating blade. Leave the mixture to rest for about 15 mins so the liquid releases from the onions and potatoes. Carefully drain off the liquid for about 30 mins until the mixture is dry, then put in a cheese cloth and squeeze out the remaining liquid.
  • Add the eggs, flour, 1 tsp sea salt and pepper, and mix well. Pour the oil into the pan so that it is 2-3cm deep. Set over a medium heat for a few minutes until it ripples.
  • Carefully spoon in the mixture to the size you want - 2 tbsp for large latkes or 1 tbsp for small. Fry them in batches to avoid overcrowding the pan, and cook on each side until browned for 2 mins. Remove to a plate lined with kitchen paper, then season with a sprinkling of salt. Serve with the soured cream and smoked salmon, finished with a sprinkling of chives, or just apple sauce - both are traditional.

Tips:

  • Use russet potatoes: Russet potatoes are the best type of potato for latkes because they have a high starch content, which makes them crispy when fried.
  • Grate the potatoes by hand: Grating the potatoes by hand gives them a better texture than using a food processor.
  • Squeeze out the excess moisture from the potatoes: This will help the latkes to be crispy.
  • Use a large skillet: This will help the latkes to cook evenly.
  • Don't overcrowd the skillet: Cooking the latkes in batches will help them to cook evenly.
  • Flip the latkes carefully: Use a spatula to carefully flip the latkes so that they don't break.
  • Serve the latkes hot: Latkes are best served hot with your favorite toppings.

Conclusion:

Southwestern-style potato latkes are a delicious and easy-to-make dish that is perfect for any occasion. They are crispy on the outside and fluffy on the inside, and they are packed with flavor. Serve them with your favorite toppings, such as sour cream, salsa, or guacamole, and enjoy!
