SOUTHWEST SPANAKOPITA BITES

Southwest Spanakopita Bites image

I'm a big fan of the Southwest-style egg rolls served at restaurants and wanted to re-create them without the fat of deep frying. Phyllo dough was the solution! For a main dish, I fill small flour tortillas with the filling and bake. -Marianne Shira, Osceola, Wisconsin

Conclusion

The spanakopita bites recipe is a flavorful and versatile dish that can be enjoyed as an appetizer or main course. Here are some tips to achieve the best results:

  • Use fresh spinach. If fresh spinach is unavailable, you can use thawed, well-ripped spinach for the best texture.
  • Don't overcook the spinach. Make sure to sauté the spinach until it's just softened, not soggy; otherwise you won't get the desired crispiness.
  • Don't use wet ingredients. Make sure to squeeze out all the liquid from the thawed spinach before using it. Water will make the spring roll batter too runny and it will not hold together properly.
  • Don't overfill the spring roll wrapper. Make sure to fill it up only halfway so that there is enough room to roll it up tightly. If you try to cram too much of the spinach mixture in, the spring roll will be difficult to roll and it will fall apart when you cook it.
  • Don't skimp on the frying oil. Make sure to generously cover the bottom of the pan with oil before adding in the spring roll and fry until golden brown. This will prevent them from sticking to the pan and will help them achieve crispy exterio.

This spanakopita bites recipe is a flavorful and versatile dish that can be enjoyed as an appetizer or main course. By following these tips, you can achieve a crispy, flaky crust and a flavorful spinach and feta cheese center every time.
