BEST EVER GREEN BEAN CASSEROLE

Best Ever Green Bean Casserole image

Go fresh with Alton Brown's Best-Ever Green Bean Casserole recipe from Good Eats on Food Network. Onions tossed in panko breadcrumbs provide a crunchy topping.

Provided by Alton Brown

Categories     side-dish

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 15

2 medium onions, thinly sliced
1/4 cup all-purpose flour
2 tablespoons panko bread crumbs
1 teaspoon kosher salt
Nonstick cooking spray
2 tablespoons plus 1 teaspoon kosher salt, divided
1 pound fresh green beans, rinsed, trimmed and halved
2 tablespoons unsalted butter
12 ounces mushrooms, trimmed and cut into 1/2-inch pieces
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
1/4 teaspoon freshly ground nutmeg
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup half-and-half

Steps:

  • Preheat the oven to 475 degrees F.
  • Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick cooking spray and evenly spread the onions on the pan. Place the pan on the middle rack of the oven and bake until golden brown, approximately 30 minutes. Toss the onions 2 to 3 times during cooking. Once done, remove from the oven and set aside until ready to use. Turn the oven down to 400 degrees F.
  • While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Add the beans and blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
  • Melt the butter in a 12-inch cast iron skillet set over medium-high heat. Add the mushrooms, 1 teaspoon salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the half-and-half. Cook until the mixture thickens, stirring occasionally, approximately 6 to 8 minutes.
  • Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.

SPECIAL GREEN BEAN BAKE

Special Green Bean Bake image

This is one my favorite green bean side dishes. It has been in my family for a very long time. It goes great with pot roast and potatoes. It's almost like a green bean relish. Not your ordinary green bean dish! Even better left over. I've also added rinsed and drained water chestnuts for some crunch.

DAWN HORNSBY'S UNUSUAL GREEN BEAN CASSEROLE

Dawn Hornsby's Unusual Green Bean Casserole image

My mom used to make this all the time. She would experiment with all types of food and in turn, her creations were wonderful!! Though, I do not know if this is one of her original recipes but it was handwritten in her notebook of recipes that was given to me at the time of her death.

Provided by Traci Jeff Poole2

Categories     Vegetable

Time 35m

Yield 1 batch

Number Of Ingredients 8

3 (9 ounce) packages frozen French style green beans
1 1/2 cups water
1 1/2 teaspoons salt
1 (5 ounce) can water chestnuts, sliced, drained
2 cans cream of celery soup
1/8 teaspoon pepper
1/2 cup whole milk
2 cans French fried onions rings

Steps:

  • Combine water, beans and salt. Bring to a quick boil.
  • Reduce heat until it has thawed and slightly crisp. **About 4 minutes** Drain them.
  • In a 2 quart casserole dish, layer the beans and chestnuts.
  • Next, mix the milk and soup into a separate bowl. Add pepper.
  • Pour this over the beans and chestnuts. Bake at 350* for 25 minutes.
  • Remove from oven and top with the onion rings and bake again until they are a golden brown.

Tips:

  • Choose fresh green beans: Fresh green beans are the best choice for this casserole. They should be crisp and tender, with no signs of wilting or bruising.
  • Cook the green beans properly: Green beans should be cooked until they are tender but still have a slight crunch. Overcooked green beans will be mushy and lose their flavor.
  • Use a good quality cream of mushroom soup: The cream of mushroom soup is a key ingredient in this casserole, so it's important to use a good quality brand. Look for a soup that is made with real mushrooms and has a rich, creamy flavor.
  • Don't skimp on the cheese: Cheese is another important ingredient in this casserole. Use a good quality cheddar cheese that is sharp and flavorful. You can also add other cheeses, such as Parmesan or Gruyère, to taste.
  • Bake the casserole until it is golden brown: The casserole should be baked until the top is golden brown and bubbly. This will ensure that the casserole is cooked through and that the cheese is melted and gooey.

Conclusion:

Green bean casserole is a classic holiday dish that is easy to make and always a crowd-pleaser. With its creamy sauce, tender green beans, and crispy onion topping, it's a dish that everyone will love. Whether you're serving it at Thanksgiving, Christmas, or any other special occasion, this casserole is sure to be a hit.
