5 cloves garlic
8 fresh green Thai chiles, or about 3?4 fresh serrano peppers
Small bunch cilantro, divided
1/2 teaspoon kosher salt
5 teaspoons sugar, preferably superfine
6 tablespoons lime juice, preferably from Key limes
1/4 cup Thai fish sauce
2 tablespoons coarsely chopped cilantro (stems and leaves)

Steps:

  • Grill garlic and chiles: Preheat charcoal grill according to grill directions to medium heat, about 30 minutes. Meanwhile, peel garlic; slice larger cloves in half. Skewer garlic and place on the grill. Remove chile stems, skewer sideways, and place on the grill. Grill garlic and chiles for 8-10 minutes, flipping after 4 minutes. Note: Alternatively, garlic and chiles can be charred in the oven. Preheat to broil. Place on a baking sheet 4-6 inches under the heat source for 6-8 minutes, flipping halfway through, until both sides are charred.
  • Cilantro: Place a cloth towel under the mortar to keep it stable. Trim half of the cilantro stems, roughly chop, and place in the mortar along with the salt. Use pestle to pound the stems and salt into a paste. Finely chop remaining cilantro bunch (stems and leaves); set aside.
  • Sauce: Garlic and chiles are done when they're soft, cooked through, and lightly charred. Remove from skewers and place into the mortar. Pound into the cilantro-salt mixture to break the ingredients down to a smooth paste. Add sugar, lime juice, and fish sauce to the mortar; stir around to combine. Add 2 tablespoons chopped cilantro (if there's any remaining, save for another recipe); transfer to a bowl and serve. Makes about ¾ cup. You can store it in the refrigerator in a sealed container for several days, but it tastes best immediately after it's made.

3 tablespoons butter
2 cups sliced fresh mushrooms

1/4 to 1/2 teaspoon cayenne pepper
6 garlic cloves, minced
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (10 ounces) diced tomatoes and green chilies, undrained
3 cups heavy whipping cream
2 tablespoons shredded Romano cheese
2 tablespoons tomato paste
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 pound uncooked shrimp (26-30 per pound), peeled and deveined
3/4 pound bay scallops
3/4 pound fresh or frozen clam meat, thawed

Steps:

2 teaspoons olive oil

1 28-ounce can no-salt-added tomatoes
1/2 cup clam juice
1/4 cup dry white wine
2 dozen shucked oysters, clams or scallops, or a mixture
8 ounces yolkless fettuccine
Enough parsley to yield 1 tablespoon minced
8 medium cooked shrimp

I've been making this BBQ sauce for years and I finally wrote down the recipe at my oldest instance. This sauce is thin, somewhat sweet with a little kick at the end. I use this to marinade our ribs as well as for basting, dipping etc.

1 cup brown sugar
1/2 cup butter
1/4 cup water
15 ounces tomato sauce
1 tablespoon Worcestershire sauce
1 tablespoon red wine vinegar
1 tablespoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne
1/2 teaspoon cumin
1/4 teaspoon oregano
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon ground dry mustard
1 pinch salt

Steps:

  • in a medium sauce pan over medium heat mix butter, brown sugar and water. Bring to a boil stirring frequently. Boil to 250* not quite hard ball stage.
  • reduce heat to a simmer and add tomato sauce. The sugar mixture may seize depending on the temperature of the tomato sauce. That's fine, just stir until the sugar mixture dissolves.
  • add the rest of the ingredients and let simmer 10-20min stirring occasionally. Flavors will develop as it sits.
  • If you want a thicker sauce cook the butter and sugar longer, but keep a close eye on it so it doesn't burn. It'll thicken up in the fridge.
  • Refrigerate till ready to use, will keep several weeks in the fridge.
  • I usually make large batches of this and can it.
  • Serving size is 2 tbls and this makes approximately 2 pints. or 4 cups.
