1/4 cup fresh lemon juice

Steps:

1 tbsp cumin seed
1 garlic clove
¼ tsp red chilli or pinch of chilli flakes
juice 1 lemon
4 tbsp olive oil
8 lamb chops
250g quinoa
5 spring onions , sliced
small handful coriander
steamed stem broccoli , to serve

  • In a pestle with a mortar crush the cumin seeds then add the garlic clove, chilli and some salt and pepper. Mash to a paste. Stir in the lemon juice and olive oil and pour half the mix over the lamb chops and leave to marinate. Set the other half aside.
  • Rinse the quinoa in cold water then place in a saucepan with twice the volume of water. Place on the heat and bring to the boil then turn down the heat slightly and boil gently for 10 mins. Turn the heat off and stir through the reserved dressing. Cover and leave for another 10 mins.
  • Meanwhile heat a griddle pan or grill to high and cook the lamb for about 3-5 mins on each side or until cooked to your liking. When ready to serve stir the spring onions and coriander through the quinoa and serve with the lamb and steamed stem broccoli dressed in a drizzle more oil.

1 large bunch flat-leaf parsley, (about 4 ounces)
1 bunch chives, (about 1/4 ounce), snipped into 1/4-inch lengths
1 tablespoon unsalted butter
Salt and freshly ground black pepper, to taste

Steps:

  • In a medium saucepan, combine quinoa and stock; bring to a boil. Cover, and reduce heat to low. Simmer until all liquid is absorbed and the grains are translucent, about 12 minutes. Remove from heat.
  • Meanwhile, pick 1/2 cup parsley leaves from stems, chop leaves coarsely, and set aside. Place remaining parsley leaves, parsley stems, and 1/4 cup water in a food processor; process until pureed. 1 tablespoon flour
2 teaspoons ground cumin
1 teaspoon garlic powder

1 medium zucchini, cut in half lengthwise, then cut in 3/4 inch slices
1 small orange bell pepper, cut in 3/4 inch chunks
1 small red bell pepper, cut in 3/4 inch chunks
1 small red onion, sliced and cut in 3/4 inch chunks
1 cup grape tomatoes, cut in half
1 cup peeled baby carrots, cut in half crosswise
2 1/2 cups unsalted vegetable stock or broth

Steps:

  • Preheat oven to 400°F. Place Reynolds® Oven Bag in 13x9x2-inch pan.
