Steps:

  • For the apples: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.

  • For the cake: Combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. 1/2 cup rolled oats
1/4 cup brown sugar
1 teaspoon cinnamon
25 g very cold butter (cut into 3 or 4 pieces)
2 medium apples
1 cup sugar
1 egg
125 g very soft butter (either melted or very soft)
1 1/2 cups flour
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon allspice
1 teaspoon salt

Steps:

  • Make the topping first by placing all the topping ingredients into the food processor bowl and process with the metal chopping blade until the butter is chopped into small pieces. Do not over process or the rolled oats will be chopped too fine.
  • Tip topping out of the bowl.
  • Cake:.
  • Without washing the bowl add in the apples which have been cored and cut into about 12 pieces. There is no need to peel them first.
  • Process with metal blade until cut into fine pieces.
  • Add the remaining cake ingredients. It is not necessary to sift the dry ingredients first but make sure the baking soda is not lumpy.
  • Line the base of a 9"/23cm tin with baking paper & butter or spray the sides.
  • Pour batter into prepared tin.
  • Sprinkle over the topping mix.
  • Bake at 350'F/180'C for approx 40-45 minutes or until the sides of cake shrink from the edge of the tin and the centre springs back when pressed lightly.
  • Serve hot, warm, reheated or cold with whipped cream and/or custard as a dessert or cold in lunchbox.

  • Combine sugar, cream of tartar, and 1/4 cup water in a medium saucepan over medium heat, stirring until sugar dissolves. Cook, without stirring and occasionally swirling pan for even cooking, until mixture turns a dark amber color. Remove from heat; slowly add apple cider, cream, vinegar, vanilla, and salt (mixture will bubble vigorously), whisking to combine. Return pan to medium heat and bring to a vigorous boil. Reduce heat to a simmer and cook, stirring to dissolve any caramel bits, for 1 minute. Remove from heat and let cool. Set aside. DO AHEAD: Caramel sauce can be made 1 week ahead. Cover and chill.   • Arrange a rack in middle of oven and preheat to 350°F. Generously coat Bundt pan with nonstick spray. Place butter in a medium saucepan over medium heat. Scrape in seeds from vanilla bean; add bean. Cook, stirring often, until butter foams, then browns (do not burn), about 5 minutes. Carefully remove vanilla bean; pour brown butter into a medium bowl and chill until slightly firm, about 45 minutes.
  • Pulse flour and almonds in a food processor until almonds are finely ground. Transfer to a large bowl. Whisk in baking powder and next 7 ingredients; set aside.
  • Using an electric mixer on medium speed, beat brown butter, brown sugar, sugar, and 3/4 cup powdered sugar in a large bowl, frequently scraping down sides and bottom of bowl and beaters, until light and fluffy, about 5 minutes. Mix in lemon zest. Add eggs and yolks one at a time, beating to blend between additions; beat mixture until fluffy, about 3 minutes.

1/2 tsp. freshly ground black pepper
1/2 tsp. ground cardamom

1 1/2 cups (185 g) all-purpose flour
2 tsp. baking powder
2 large eggs
2 egg yolks
1/2 cup (100 g) (packed) brown sugar
1 tsp. vanilla extract

Steps:

  • Preheat oven to 350°F. Pour about 1 Tbsp. oil into a 9x5" loaf pan and coat bottom and sides with fingertips. Sprinkle granulated sugar onto sides and bottom of pan to lightly coat.
  • Grate apples, peel and all, on the large holes of a box grater. Gather apples in a clean kitchen towel and wring out excess liquid. Be aggressive! You want them as dry as possible when they go into the batter.

  • SPICED APPLE CAKE: 1. Preheat oven to 350 degF 2. For the cake mixture, sift flour and baking powder into a large bowl with the salt and superfine sugar. Cut in the butter and rub together with your fingers until you form a bread crumb texture (or use a food processor). 3. Beat the egg in a measuring bowl with the vanilla extract, then pour in milk (up to about 1/2 cup mark). Add the milk and egg to the flour mixture and bring together to form the cake. Add a little orange zest (leaving most for the apple mixture), and mix through. 4. Peel, core and dice the apples. Add the butter to a hot frying pan and toss the apples before caramelizing with the honey. Add the chopped dates and cinnamon to the pan along with the rest of the orange zest. Cook for a few minutes, making sure that the apples are evenly coated with honey. 5. Divide the cooked apples into four individual baking dishes (approx 1 cup each). Use a piping bag to squeeze a thin layer of the cake mixture on top. Sprinkle sliced almonds on top of the cake mixture. Bake for 18 minutes until golden brown and risen in the center. 6. Serve the individual cakes with a scoop of vanilla ice cream and a dusting of powdered sugar.
