SPICED CRANBERRY-ORANGE SAUCE WITH ZINFANDEL

Spiced Cranberry-Orange Sauce With Zinfandel image

Ruby red, rich and spicy cranberry sauce with a bright citrus note. A sophisticated blend of flavors! Goes equally well with roast turkey, beef, or ham. Make a batch at T.G., and freeze half for X'mas. Delicious! Note: I reduce the sugar to 3/4 cup of each, and use a tablespoonful of orange zest in place of the strip as we really enjoy the orange flavor. No need to strain the syrup, just scoop out the whole spices. Adapted from Bon Appetit, November 2001.

RASPBERRY RED WINE CRANBERRY SAUCE

Raspberry Red Wine Cranberry Sauce image

Red wine, raspberries, and cinnamon make for a special - yet still surprisingly simple - homemade cranberry sauce. Tart, just a bit jammy, and warmly spiced. Love!

Provided by Kare for Kitchen Treaty

Time 20m

Number Of Ingredients 5

12 ounces fresh or frozen cranberries
6 ounces fresh or frozen raspberries
1/2 cup honey + more to taste (can substitute granulated sugar [will not be refined-sugar free] or pure maple syrup)
3/4 cup red zinfandel wine (not white zinfandel!)
1/2 teaspoon ground cinnamon

Steps:

  • Rinse cranberries and discard any unripe or shriveled berries. Pick over raspberries and do the same. Place in a medium saucepan over medium heat. Add 1/2 cup honey, zinfandel, and cinnamon.
  • Cook uncovered, stirring occasionally, until cranberries pop and the sauce has thickened, about 20 minutes. Taste and add additional honey until the sauce has reached your desired level of sweetness. Remove from heat and let cool. Serve.
  • Keeps for up to one week refrigerated in an airtight container, or for up to two months in the freezer.

Tips:

  • Choose a high-quality Zinfandel wine for the sauce. A good Zinfandel will have a bold, fruity flavor that will complement the cranberries.
  • Use fresh cranberries for the sauce. Fresh cranberries will have a brighter flavor than frozen cranberries.
  • Simmer the sauce for at least 30 minutes to allow the flavors to meld.
  • Serve the sauce warm or at room temperature. The sauce can be made ahead of time and reheated when ready to serve.
  • The sauce can be used as a glaze for roasted chicken or pork, or as a dipping sauce for appetizers.

Conclusion:

This spiced cranberry and Zinfandel sauce is a delicious and versatile sauce that can be used in a variety of ways. The sauce is easy to make and can be made ahead of time, making it a great option for busy weeknights. The sauce is also a great way to use up leftover cranberries after Thanksgiving or Christmas.
