SPICED ORANGE CRANBERRY SAUCE

Spiced Orange Cranberry Sauce image

This recipe was graciously shared with me by a Jamaican friend, many years ago. It makes a delicious sauce, different from any other cranberry sauce I've ever tasted or made. It does not "gel" but you do want to cook it long enough to make a good, thick consistency. You can use 1 tablespoon of excellent quality ground cinnamon instead of the cinnamon stick, if you prefer. 3 cinnamon sticks
1 pint orange juice
2 cups packed brown sugar

Steps:

  • Place the cranberries, grated orange rind, cinnamon, orange juice, brown sugar and enough water to cover cranberries in a saucepan. Bring mixture to a boil over high heat. Immediately turn heat down and simmer for about 1 hour or until the sauce has thickened. Taste for sweetness and adjust with additional sugar if necessary. You can not overcook, so continue cooking until you have a good thick consistency. Let mixture cool a bit then refrigerate in a covered container.

CRANBERRY SAUCE WITH PORT & STAR ANISE

Cranberry sauce with port & star anise image

Star anise gives this classic sauce a really Christmassy flavour, and a contemporary update

Provided by Tony Tobin

Categories     Condiment, Dinner, Side dish

Time 30m

Number Of Ingredients 6

250g fresh or frozen cranberry
grated zest of 1 orange and the juice of 2 oranges
2 tbsp redcurrant jelly
150ml/¼ pint port
1 star anise
2 tbsp golden caster sugar , or more to taste

Steps:

  • Tip the cranberries into a saucepan, grate in the orange zest then squeeze in the juice. Add the redcurrant jelly, port and star anise and slowly bring to the simmer.
  • Cook gently over a low heat for about 15 minutes, stirring occasionally, until all the cranberries have burst and the sauce thickens and looks glossy. You want to end up with a saucy texture rather than a jammy one - you will find fresh cranberries thicken the sauce more readily whereas the frozen cranberries will take a little longer.
  • Stir in the sugar and taste. Chef Tony Tobin likes the sauce to have enough tartness to make you suck in your cheeks, but add more sugar if you prefer. Cool and then fish out the star anise. The sauce will keep in the fridge in a covered container for 1 week or for 2 months in the freezer.
  • To serve, take out of the fridge an hour or so before the meal so that it returns to room temperature, then spoon into a serving dish.

SPICED CRANBERRY SAUCE WITH ORANGE AND STAR ANISE

Spiced Cranberry Sauce with Orange and Star Anise image

Number Of Ingredients 6

4 Whole allspice berries
2 Whole star anise
3/4 cup Sugar
1/4 cup Orange Juice
1/2 Zest strips from 1/2 Orange
12 ounces Fresh Cranberries

Steps:

  • Gather allspice and star anise in a 4-inch square of cheesecloth and tie into a sachet.
  • In a medium pot over medium heat, combine sugar, orange juice, and 1/4 cup water.
  • Add sachet and cook, stirring occasionally, until sugar melts and liquid begins to bubble, about 5 minutes.
  • Remove from heat and let steep for 10 minutes.
  • Return pot to stove over medium-high heat and add cranberries and zest.
  • Cook until cranberries just begin to pop, about 7 minutes. Discard sachet.
  • Transfer sauce to a medium serving container and refrigerate until chilled, 1 hour or up to 3 days.

Tips:

  • Use fresh cranberries: Fresh cranberries have a brighter flavor and a firmer texture than frozen or canned cranberries. If you can't find fresh cranberries, you can use frozen cranberries, but thaw them completely before using.
  • Don't overcook the sauce: Cranberry sauce should be cooked until the cranberries are softened and the sauce has thickened, but it should not be overcooked or the cranberries will become mushy. Overcooked sauce will also lose its bright red color.
  • Add orange and star anise for extra flavor: The orange and star anise in this recipe add a delicious citrusy and spicy flavor to the cranberry sauce. If you don't have orange or star anise, you can substitute other citrus fruits, such as lemon or grapefruit, or other spices, such as cinnamon or nutmeg.
  • Make the sauce ahead of time: Cranberry sauce can be made up to 3 days ahead of time and stored in the refrigerator. This makes it a great make-ahead dish for holiday meals.
  • Serve the sauce warm or cold: Cranberry sauce can be served warm or cold. If you are serving it warm, reheat it gently over low heat until it is warmed through. If you are serving it cold, let it chill in the refrigerator for at least 2 hours before serving.

Conclusion:

This spiced cranberry sauce with orange and star anise is a delicious and festive addition to any holiday meal. It is easy to make and can be made ahead of time. The sauce is also versatile and can be served warm or cold. Whether you are serving it with turkey, ham, or roasted vegetables, this cranberry sauce is sure to be a hit.
