2 onions
3 tbsp vegetable oil
1 tsp mustard seeds
1 tsp cumin seeds
2 leeks , sliced
3 carrots , sliced
2 medium potatoes , chopped
2 parsnips or 1 small celeriac, chopped
2-3 tsp curry paste
1.2l vegetable stock from granules or a cube)
250ml natural yogurt , plus extra to serve
coriander or parsley, to finish

Steps:

  • Peel and halve the onions through the root, then slice thinly lengthways. Heat 2 tbsp of the oil in a large pan, add half the onions and fry until just starting to colour. Add the mustard and cumin seeds and fry until nicely browned.
  • Add vegetables and curry paste and stir until well coated. Pour in the stock and bring to the boil. Reduce the heat, partly cover and simmer for 30 mins, until the vegetables are tender. Meanwhile, heat the remaining tbsp of oil in a small pan, add the onions and fry quickly until crisp and browned. Tip onto kitchen paper.
  • Purée the soup in batches, then return to the pan and stir in most of the yogurt. Taste and add salt, if necessary. Reheat gently, then ladle into bowls and top each with a spoonful of yogurt, some fried onions and a scattering of roughly chopped coriander or parsley.

1 tablespoon stone-ground mustard
1 tablespoon Sriracha
Vegetable or peanut oil, for fryer
3 large yellow onions, sliced 1/8-inch thick, in a bowl of ice water
1 cup all-purpose flour
1 tablespoon salt
1 teaspoon ground pepper
1 gallon ice water

Steps:

  • For the spiced ketchup: In a bowl, whisk together the ketchup, mustard and Sriracha, stirring well. Then refrigerate until serving.
  • For the onion rings: Preheat a deep-fryer to 375 degrees F with vegetable or peanut oil, waiting until heated. Next, drain the ice water from the cut onions, ensuring the water has drained. Next, in a bowl, blend the flour, salt and pepper, mixing well. Then add one-third of the onions. Mix the onions well, tap off excess flour and then add to the fryer, cooking until crisp, about 2 minutes. After removing, allow to drain excess oil on paper towels. Repeat with the remaining onions. Serve with the spiced ketchup.

3 tablespoons butter
1/2 cup dry sherry
4 1/2 lbs onions, peeled and thinly sliced
1 teaspoon browning sauce, such as Kitchen Bouquet
2 teaspoons sugar
1 tablespoon red curry paste
8 -10 toasted french bread rounds (stale or toasted bread works best)
2 (14 ounce) cans beef broth
1 cup shredded swiss cheese
1 cup shredded gruyere cheese
2 (10 ounce) cans beef consomme

Steps:

  • Melt butter in a large soup pot over a medium high heat.
  • Add onions and sugar.
  • Cook, stirring occasionally, until onions turn a deep brown (but not burned), about 20-25 minutes.
  • Add curry paste and stir until dissolved into onions.
  • Add 1 can beef broth.

1 celery root, peeled and cut into 1/2-inch pieces
2 turnips, quartered

1 (2 pound) butternut squash, peeled and cut into 1/2-inch pieces
¼ cup olive oil
1 teaspoon kosher salt
