Steps:

  • Knead together the beef, onion, pepper, garlic and salt and pepper. Let stand 30 minutes to blend flavors. Form into 16 oval balls. String 4 on skewers alternating with a onion quarter, green pepper quarter and cherry tomato on each skewer. Grill about 5 minutes until browned, turn and grill other side. Served with spiced brown rice and a large piece of the flat Afghan bread.

Delicious spicy meatballs which never absorb oil. Makes a good appetizer if you make small meatballs and put them on a toothpick.

2 tablespoons split chickpeas
1 onion
3 garlic cloves
1/2 teaspoon pepper
1 teaspoon cumin
1 teaspoon coriander
3 cloves
1/2 inch cinnamon stick
salt
1/2 kg mincemeat

Steps:

  • soak the split chickpeas for 10 min then boil till cooked.
  • Put all the ingerdients except the mince into the blender and grind till smooth with a few Tbsp water.
  • Mix with the meat.
  • Shape into 1/2 inch balls.
  • Shallow fry in 1/2 inch of oil till brown.

1 1/2 lbs ground lamb or 1 1/2 lbs beef
2 teaspoons minced ginger
3 cloves garlic, minced
4 cayenne bell peppers (I just used Thai bird's eye chilies)
1 small onion, minced
1 egg
1/2 teaspoon turmeric
2 teaspoons garam masala
2 tablespoons freshly chopped cilantro
6 mint leaves, chopped (or 1 teaspoon dried)
1 medium potato, finely grated
salt and pepper

Steps:

  • Put the ground meat in a larger bowl, and add ginger, garlic, cayenne peppers, onion, egg, tumeric, garam masala, cilantro, mint, potato, and salt and pepper to taste.
  • Mix well (you'll have to use your hands for this one).
  • Form golf ball sized balls with the meat mixture, and set aside.
  • Allow to rest 30 minutes.
  • Heat oven to 375º.
  • Place the kofta on a non-stick cookie sheet and bake 25 minutes or until cooked through, and slightly browned.
  • Serve hot, with nan bread, cucumber-yogurt sauce and a fresh tomato and mint salad.

These kebabs have 6 different kinds of spices; the first time I smelled them I knew immediately that I had to find the recipe. The most affordable way to purchase the spices is in bulk at either a health food store or an Asian or Middle-Eastern market. They are very good! Serve with yogurt, flat bread, lettuce, tomato and cucumber.

4 cloves garlic, minced
1 teaspoon kosher salt
1 pound ground lamb
3 tablespoons grated onion
3 tablespoons chopped fresh parsley
1 tablespoon ground coriander
1 teaspoon ground cumin
½ tablespoon ground cinnamon
½ teaspoon ground allspice
¼ teaspoon cayenne pepper
¼ teaspoon ground ginger
¼ teaspoon ground black pepper
28 bamboo skewers, soaked in water for 30 minutes

Steps:

  • Mash the garlic into a paste with the salt using a mortar and pestle or the flat side of a chef's knife on your cutting board. Mix the garlic into the lamb along with the onion, parsley, coriander, cumin, cinnamon, allspice, cayenne pepper, ginger, and pepper in a mixing bowl until well blended. Form the mixture into 28 balls. Form each ball around the tip of a skewer, flattening into a 2 inch oval; repeat with the remaining skewers. Place the kebabs onto a baking sheet, cover, and refrigerate at least 30 minutes, or up to 12 hours.
  • Preheat an outdoor grill for medium heat, and lightly oil grate.
  • Cook the skewers on the preheated grill, turning occasionally, until the lamb has cooked to your desired degree of doneness, about 6 minutes for medium.
