CHICKEN STUFFED BAKED AVOCADOS
This is a recipe that I hope gets passed down. Everyone seems to like it. We make it as a main dish when I make it with chicken. We also make it a side when omitting the chicken. We will then have grilled chicken with it.

Steps:
- Start by preheating the oven to 400°F.
- Cut the avocados in half and scoop out a bit of the flesh from the center (think about digging a little whole in the middle of the avocado without piercing through to the other side) and save the rest for a later salad.
- Add a small layer of harissa in the whole.
- Crack the egg into the whole - try to get the yolk in the whole while the white part spills over the pan and around the avocado.
- Add a pinch of salt and let this bake for 10 to 15 minutes.
- Once it bakes off, take it out from the oven and add on all your toppings with a squeeze of lime juice. Enjoy!

This fresh, fast, and easy snack is heart-healthy and delicious. I have tried lemon, lime, orange, grapefruit, Meyer lemon, key limes and Satsuma juices and I like good 'ol fashioned lemon the best, but please experiment to your own tastes!

Tips:
- Choose ripe but firm avocados for this recipe. Unripe avocados will be difficult to scoop out and stuff, while overripe avocados will be too mushy.
- Use a sharp knife to cut the avocados in half. This will help to prevent the avocado from tearing.
- Scoop out the avocado flesh carefully, leaving a thin layer of avocado around the skin. This will help to hold the stuffing in place.
- Be creative with your stuffing. You can use a variety of ingredients, such as cooked rice, beans, vegetables, and cheese.
- Top the stuffed avocados with a sprinkle of cheese or breadcrumbs before baking. This will help to create a crispy crust.
- Bake the stuffed avocados in a preheated oven until the filling is heated through and the avocado is tender.
- Serve the stuffed avocados immediately, while they are hot and fresh.
Conclusion:
Spicy Baked Stuffed Avocados are a delicious and easy-to-make appetizer or main course. They are perfect for a party or potluck, and they can be made ahead of time. With their creamy avocado filling and crispy topping, these stuffed avocados are sure to be a hit!
