1 tablespoon chili powder
1 teaspoon chile-garlic sauce (such as Sriracha®)
1 (16 ounce) can black beans, rinsed and drained
1 jalapeno pepper, minced
1 cup canned whole kernel corn, drained
3 cloves garlic, minced
½ cup bread crumbs
½ cup whole wheat flour
2 tablespoons vegetable oil

Steps:

  • Whisk egg, cumin, chili powder, and chile-garlic sauce together in a bowl.
  • Mash black beans in a separate bowl until they reach a paste-like consistency.

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 jalapeno pepper, seeded and minced
1 teaspoon dried oregano
½ red bell pepper, diced
1 ear corn, kernels cut from cob
1 (15 ounce) can black beans, drained and rinsed
½ cup plain bread crumbs
4 teaspoons chili powder
1 tablespoon minced fresh cilantro
½ teaspoon ground cumin
½ teaspoon salt
½ cup all-purpose flour, or as needed
1 tablespoon olive oil, or as needed

Steps:

  • Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir onion, garlic, jalapeno pepper, and oregano until onions are translucent, 8 to 10 minutes. Cook and stir red bell pepper and corn into onion mixture until red bell pepper is tender, 2 to 4 more minutes.

I tried this recipe after finding it on the internet, hoping to convince my family to eat vegetarian every now and then. It worked! It worked so well, they didn't even know there wasn't any meat in their burgers! This is nice and spicy and gets a lovely crust on it. This is vegetarian and vegan. You don't even need to serve it on a bun if you like! If you don't mind the cheese, it's great with a little shredded cheddar on top. Prep time includes 2 hours chilling.

1/2 yellow onion, chopped
1 jalapeno, seeded and chopped
3 garlic cloves
1 (14 1/2 ounce) can black beans, drained
1/2 cup plus 2 tablespoons rolled oats
1/2-1 cup corn (fresh, frozen or canned)
1 green onion, thinly sliced
2 teaspoons cumin
1/2 teaspoon curry powder
1/4 teaspoon cayenne pepper
1/4 cup plain breadcrumbs
salt and pepper
3 tablespoons vegetable oil
4 hamburger buns

Steps:

  • Place onion, jalapeno and garlic in a food processor and pulse 5 or 6 times.
  • Add beans, oats, corn, green onion, cumin, curry powder, and cayenne. Season with salt and pepper and pulse 8 times. Scrape downs sides of the bowl and pulse an additional 5 to 8 times (depending on desired texture).
  • Place mixture into a mixing bowl, cover with plastic wrap and place in the refrigerator for at least two hours.
  • Remove chilled mixture from refrigerator and stir in breadcrumbs. Adjust seasonings.
  • Pour oil into a heavy bottom skillet and place over medium. Form mixture into four equal patties. Cook patties for 5 to 7 minutes on each side or until a crust develops and the patties are heated through.
  • Remove patties from heat and place onto burger buns. Assemble burger with toppings and condiments of your choice and serve.

4 tablespoons oil
1 onion, diced
2 jalapeno peppers, minced
2 teaspoons garlic, minced
1 teaspoon Mexican chili powder (mild)
1 teaspoon ground cumin
1/4 teaspoon dried oregano
3 (15 ounce) cans black beans, rinsed and drained
1 1/2 cups quick-cooking oats
2 eggs, beaten
1/2 cup chopped fresh cilantro
2 teaspoons salt
1/4 teaspoon ground black pepper

Steps:

  • Heat a nonstick frying pan over medium heat until hot. Add the oil and when it is warm, add the onion. Stir-fry for 5 minutes.
  • Add the jalapeno peppers and cook for another 2 minutes, stirring occasionally.
  • Add the garlic and cook for another 2 minutes, stirring occasionally.
  • Turn off heat and stir in the chili powder, ground cumin and oregano. Remove from heat and set aside to cool.
  • Meanwhile, rinse and drain (several times) the black beans and then put them into a large mixing bowl.
  • Roughly mash the black beans with a potato masher or a fork.
  • Add the uncooked oats and stir to combine.
  • Add the cooked onions and stir to combine.
  • Add the eggs,cilantro (more or less depending on how much you like cilantro), salt and pepper. You can add a bit more pepper if desired.
  • Mix well and form into patties. They are easier to fry if you make a smaller size pattie and use a smaller hamburger bun.
  • Heat a frying pan over medium-high heat and cook 4-5 minutes on the first side, or until well browned. Carefully flip over the burgers and cook about 3 minutes on the second side. Like most vegetarian burgers, they can crumble, so extra care needs to be taken when frying them.
  • Serve with your favorite garnishes.

1 teaspoon canola oil
2 cups black beans, cooked (or 1 can, drained and rinsed)
1 egg, beaten
1/2 cup quick-cooking oats
1/4 cup red onion, diced
2 garlic cloves, minced
1/2 tablespoon chili paste
1/2 teaspoon kosher salt
1/4 teaspoon cracked black pepper
2 tablespoons cilantro, chopped
2 tablespoons canola oil

Steps:

  • Heat 1 teaspoon of the oil over medium heat.
  • Add the red onion and garlic to the pan and saute until softened, about 8 minutes and then set aside to cool for a few minutes.
  • Combine beans, egg, oats, onion, mixture, chili paste, salt, pepper and cilantro and thoroughly mix and mash until pretty homogeneous, leaving a few whole beans.
  • Divide mixture into 4 equal portions and shape into patties.
  • Refrigerate patties for half an hour. (This step is not completely necessary but I find it helps hold the burgers together while cooking.).
  • Heat 2 tablespoons oil in large non-stick skillet over medium-high heat.
  • Place burgers carefully into the oil, being careful not to crowd the pan.
  • After 4 minutes, flip and cook another 4 minutes. They should feel firm to the touch when finished.
  • Note: To freeze for later use, after shaping flash freeze and then wrap in plastic wrap. Place wrapped burgers into freezer bag and squeeze out excess air. To cook from frozen, simply heat frozen burgers over medium-high heat on the stove-top, cooking until done.
