Yield Serves 6

Number Of Ingredients 12

24 live blue crabs
two 3-ounce packets Zatarain's crab boil or 5 tablespoons Old Bay seasoning
1 tablespoon cayenne
1/2 cup table salt
3 lemons, quartered
2 onions, halved
1 1/2 pounds small potatoes (about 2 inches in diameter)
2 heads of garlic (not separated into cloves)
6 ears of corn, shucked
2 tablespoons Old Bay Seasoning*, or to taste, for sprinkling over boiled seafood
2 pounds large shrimp (about 30, preferably with heads)
Accompaniments:Horseradish Cocktail Sauce and French bread

Steps:

  • In a 7- to 8-gallon kettle bring 5 gallons water to a boil.
  • While water is coming to a boil, in a deep sink rinse crabs in 2 or 3 changes of water. (Do not fill sink too full or crabs may crawl out.)
  • Add Zatarain's crab boil or 5 tablespoons Old Bay seasoning, cayenne, salt, lemons, and onions to boiling water and boil 5 minutes. Add potatoes and garlic and boil until tender, about 15 minutes. Transfer potatoes and garlic with a large sieve to a large platter and keep warm, covered with foil. Add corn to boiling water and cook until tender, about 5 minutes. Transfer corn with tongs to platter and keep warm, covered with foil.
  • Return water to a boil. Transfer about 6 crabs carefully with long tongs to sieve, holding them down in sieve with tongs, and turn crabs out into boiling water. Add remaining crabs in same manner. Return water to a boil and cook crabs until just cooked through, about 10 minutes. (To determine doneness, remove a claw and crack it with the handle of a dinner knife. Use Knife to extract meat from claw.) Transfer crabs with sieve to another large platter and sprinkle with 1 tablespoon Old Bay seasoning.
  • Return water to boil and cook shrimp until just cooked through, about 2 minutes. Transfer shrimp with sieve to large platter with crabs and sprinkle with remaining tablespoon Old Bay seasoning.
  • Serve crabs, shrimp, and vegetables with horseradish cocktail sauce and French bread.

Yield 4-5 people

Number Of Ingredients 12

Water
5 lbs 31-40 count Shrimp
1 pkg Zatarain's Crab Boil
1/2 bottle liquid Zatarain's Crab Boil (more if wanted)
5 Tbs. kosher salt (adjust as needed)
5 Tbs. Extra Virgin Olive Oil
1 onion, quartered
1 bell pepper, quartered
1 large lemon, sliced
2 6 packs of ice cold Red Stripe beer (or more!)
1 recipe Nancy's Cocktail sauce (see My Recipies)
1 recipe Nancy's Remoulade Sauce (see My Recipies)

Steps:

  • In a very large stock pot, add 1/2 gallon of water and the salt--after salt dissolves taste and adjust to desired salinity. Add Zatarain's package and liquid, olive oil, onion, bell pepper lemon, and 3-4 bottles of beer (have enough liquid to cover the shrimp). Bring to a rolling boil and cook until the liquid is dark (10 minutes or as long as it takes to drink a Red Stripe). Add Shrimp and let the pot return to a boil. If you need more liquid, add another beer. Boil for 5 minutes, turn heat off, and allow to sit for 10 minutes (or as long as it takes to drink a Red Stripe). Remove shrimp with a slotted spoon to a large bowl. To cool down to eat, pour two bottles of Red Stripe over and let cool for 5 minutes. Serve immediately. Serves:

Tips:

  • Use fresh, large shrimp: For the best flavor and texture, choose shrimp that are fresh and large in size.
  • Clean the shrimp properly: Before cooking, devein and peel the shrimp. This will remove the digestive tract and make the shrimp more flavorful.
  • Marinate the shrimp: To add extra flavor, marinate the shrimp in a mixture of spices, herbs, and oil for at least 30 minutes before cooking.
  • Use a variety of spices: Don't be afraid to experiment with different spices and herbs to create a unique flavor profile. Some popular choices include garlic, lemon, chili powder, cumin, and paprika.
  • Don't overcook the shrimp: Shrimp cook quickly, so it's important to avoid overcooking them. Overcooked shrimp will become tough and rubbery.
  • Serve immediately: Boiled shrimp are best served immediately after cooking. This will ensure that they are hot and flavorful.
