Spicy Coleslaw With Cumin-Lime Dressing image

This is sooo good! It goes with almost anything! I love to put some of this in a tortilla wrap in which I have cold turkey, or roast beef, or just about anything. I think you will like it too. If you're not big on cilantro, feel free to reduce it, and you can always use parsley in it's place.

COLESLAW WITH MISO DRESSING

Coleslaw With Miso Dressing image

Red cabbage is especially pretty in this dish, but green cabbage, napa or savoy would work just as well, so use whatever you like. This recipe makes a generous amount of dressing so that you can dress the slaw to your liking. Start by tossing the cabbage with half the miso mixture, then add more until it's dressed to your idea of perfection. Whatever you don't use can be tossed with other salad greens, drizzled over rice, or used as a dip for crunchy cucumbers, snap peas or carrots.

Time 10m

Yield 4 to 6 servings

Number Of Ingredients 10

1/3 cup rice vinegar
1/3 cup vegetable or other neutral oil
2 tablespoons yellow or red miso
2 tablespoons honey
Kosher salt (such as Diamond Crystal)
Black pepper
1 1/4 pounds red cabbage (about 1/2 large head), cored and thinly sliced (about 6 cups)
1 cup coarsely chopped cilantro leaves and tender stems
1/2 cup roasted, salted peanuts
1 tablespoon lime juice

Steps:

  • In a small bowl, whisk together vinegar, oil, miso and honey. Season with a pinch of salt (miso is salty, so don't overdo it) and a few grinds of black pepper.
  • Roughly chop any long pieces of cabbage so they are bite-size. Transfer cabbage to a large bowl and toss with half the dressing, adding more as you like. Slaw can be made up to this point up to 1 day ahead.
  • Just before serving, add cilantro, peanuts and lime juice, and toss to combine.

CREAMY SPICED COLESLAW

Creamy Spiced Coleslaw image

A creamy coleslaw with lots of flavor. The seasonings complement each other and the cabbage. Sometimes I add fresh minced onion if I am in the mood to chop it up. My family and friends love this coleslaw especially with BBQ sandwiches and Italian dishes.

Time 1h10m

Yield 8

Number Of Ingredients 9

1 cup mayonnaise
2 tablespoons sugar
½ teaspoon salt
½ teaspoon pepper
½ teaspoon celery seed
½ teaspoon garlic powder
½ teaspoon onion powder
2 tablespoons cider vinegar
1 (16 ounce) package shredded coleslaw mix

Steps:

  • In a large bowl, mix mayonnaise, sugar, salt, pepper, celery seed, garlic powder, onion powder and cider vinegar. Toss coleslaw mix with dressing to coat. Chill at least 1 hour before serving.

Tips:

  • Use a sharp knife or mandoline to thinly slice the cabbage and carrots. This will help the coleslaw absorb the dressing more easily and make it easier to eat.
  • If you don't have a mandoline, you can use a food processor fitted with a shredding blade. Just be careful not to over-process the cabbage and carrots, or they will become mushy.
  • Use a variety of cabbage and carrots for a more flavorful coleslaw. Try using red cabbage, savoy cabbage, or kohlrabi in addition to green cabbage and carrots.
  • Add other vegetables to your coleslaw, such as shredded broccoli, cauliflower, or bell peppers. This will add extra nutrition and flavor to the dish.
  • Use a homemade dressing for the coleslaw. This will give you more control over the flavor and ingredients. The dressing in this recipe is made with Greek yogurt, mayo, cumin, lime juice, and cilantro.
  • Let the coleslaw chill for at least 30 minutes before serving. This will allow the flavors to meld and the cabbage and carrots to soften slightly.

Conclusion:

Spicy coleslaw with cumin-lime dressing is a refreshing and flavorful side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and delicious side dish, give this spicy coleslaw a try.
