SARAH'S SUPER-SPICY GUACAMOLE

Sarah's Super-Spicy Guacamole image

I got this recipe from a Mexican chef at work and adapted it to my taste, as I like very spicy food. The tomatoes and roasted red peppers contrast the spice with sweetness and mildness. It is a very easy recipe, and is perfect just as a dip, or in tacos, burritos, or enchiladas. Top blue corn tortilla chips with this guacamole and a dab of sour cream for a colorful party snack.

Time 1h20m

Yield 2 1/2 cups, 6-8 serving(s)

Number Of Ingredients 11

3 avocados
1 large red onion
4 -5 small roma tomatoes (or both!!) or 1/4 cup diced roasted red pepper (or both!!)
4 -5 tomatillos
1/2 cup jalapeno peppers or 1/2 cup serrano pepper, your choice
3 garlic cloves
1 teaspoon sea salt
1/4 teaspoon cayenne pepper
1/4 teaspoon red pepper flakes
1/4 cup finely chopped fresh cilantro
1 lime, juice of

Steps:

  • Pit and dice avocados. I like mine very chunky, but you could mash or puree them if you like a creamier guacamole.
  • Dice red onion, peppers, garlic, tomatoes and tomatillos. Leave the ribs and seeds in the peppers if you like them to be VERY spicy! Again, chop everything smaller or larger depending on your preference of texture.
  • Add cilantro.
  • Toss diced veggies with cayenne pepper, red pepper flakes, salt and lime juice.
  • Add the mixture to the avocados and toss (or mix if your avocados are pureed) evenly.
  • Adjust seasonings to taste, chill one hour to allow flavors to blend.

SPICY GUACAMOLE W/ GRAPES

Spicy Guacamole W/ Grapes image

People request this guacamole for parties all the time. I've perfected it over the years using my own techniques and tips I've learned from Mexican friends. The 1st Mexican tip I learned is to always use cilantro. The 2nd is that guacamole in Mexico is made spicy so use jalapeno peppers. My own thing I learned is that I'm not a big fan of garlic in my guacamole, which I find overpowering and too pungent. Red onion gives that similar flavor without it being overwhelming. The fruit in the guacamole is a beautiful addition that balances out the spiciness. I've used other fruit in the past (mango, pineapple) but the grapes are the best! If you are serving this with chips KEEP IT CHUNKY and if you are garnishing tacos you can blend 'til smooth. Of course you can alter the quantities of jalapenos, cilantro and grapes to suit yourself.

Time 15m

Yield 6-8 serving(s)

Number Of Ingredients 8

6 soft avocados, halved with pits removed
3 limes, halved
1 small red onions or 6 scallions, diced fine
2 tomatoes, diced
1/3 cup cilantro
1 1/2 cups red grapes, sliced in half
3 jalapenos, minced
salt

Steps:

  • Scoop out avocado flesh into a large bowl.
  • Squeeze fresh limes over the avocado.
  • Add next 5 ingredients and season with salt to taste.
  • Mash gently with a fork to combine the flavors but leave it slightly chunky.
  • *Cover with plastic wrap and refrigerate until ready to use, but do not make this too far in advance or it might turn brown.
  • *To prevent browning, put the avocado pit back into the guacamole. For some reason this works.

Tips:

  • Choose ripe avocados: The riper the avocados, the creamier and more flavorful your guacamole will be.
  • Use fresh ingredients: The fresher the ingredients, the better your guacamole will taste. This is especially true for the cilantro, onion, and garlic.
  • Don't over-mash the avocados: You want your guacamole to be chunky, not smooth. Over-mashing the avocados will make it too liquidy.
  • Add your spices and seasonings to taste: Start with a small amount of each spice and seasoning, and then add more to taste. This will help you avoid making your guacamole too spicy or salty.
  • Let your guacamole chill before serving: This will help the flavors to meld together and develop.

Conclusion:

This spicy guacamole with grapes is a delicious and easy-to-make appetizer or snack. It's perfect for parties, potlucks, or just a casual get-together. The combination of spicy and sweet is sure to please everyone. So next time you're looking for a new guacamole recipe, give this one a try. You won't be disappointed!
