1 teaspoon dried crushed red pepper flakes
3 tablespoons olive oil, plus 1 to 2 tablespoons
1 medium onion, sliced
1 (14 1/2-ounce) can diced tomatoes
1 cup dry white wine
3 garlic cloves, chopped
1/4 teaspoon dried oregano leaves
3 tablespoon chopped fresh Italian parsley leaves
3 tablespoon chopped fresh basil leaves

Be sure to adjust your salt accordingly if using the anchovies, because they add a lot of saltiness on their own.

2 lbs large shrimp, peeled and deveined
1 lemon, juice of
1/4 cup chopped parsley
1 teaspoon crushed red pepper flakes
4 garlic cloves, peeled and crushed

2 tablespoons olive oil
1 lb spaghetti
1/4 cup olive oil
1 (2 ounce) can anchovy fillets (optional)
7 -8 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
1/4 cup parsley, finely chopped

1 lb spaghetti

Steps:

  • Cook pasta in large pot of boiling, salted water until al dente (about 7 minutes?).
  • While pasta cooks, toss shrimp with lemon juice, parsley, pepper flakes, garlic, olive oil and a pinch of salt.
  • Heat large skillet over medium hight heat, add shrimp, oil and spices and cook about 3 minutes or until its pink and slightly firm.
  • Remove shrimp from pan and set aside, covered, to keep warm.

1/2 lb uncooked linguine
12 ounces shrimp scampi (*such as SeaPak Shrimp Scampi, frozen)
1 medium onion, sliced
1 (14 1/2 ounce) can diced tomatoes
1/2 cup dry white wine
1 1/2 teaspoons italian seasoning
1 teaspoon dry crushed red pepper (to taste)
1/3 cup shredded parmesan cheese (optional)

Steps:

  • ToCook linguini according to package directions until it is al dente. Meanwhile saute shrimp in large non-stick skillet on medium for 6 minutes.
  • Scoop shrimp out of pan with a slotted spoon and set aside. Return pan with scampi sauce to stove and turn heat up to medium high. Add onions and saute for 5 minutes until they are translucent.
  • Add diced tomatoes(including juice), wine, Italian seasoning and red pepper to onions.
  • Bring mixture to a low rolling boil. Boil mixture for 7 minutes, stirring occasionally.
  • Add shrimp to pan with tomato sauce and continue sauteing for 3 minutes.Add cooked linguini and toss to coat and serve with shredded parmesan cheese, if desired.
