1 lb cooked lean ground beef
1 can ranch-style pinto beans, undrained
1 can rotel style diced tomatoes and green chilies, undrained
3 cans minestrone soup (I prefer Progresso Brand)

Steps:

  • Cook ground beef in a stock pot.
  • Season to taste.
  • I add a little pepper and dried minced onion.
  • Add the rest of the ingredients, undrained.
  • (Sometimes I put the tomatoes in a blender first because my husband hates tomato chunks.) Simmer, covered, about an hour until flavors blend.
  • Stir occasionally.

2 T olive oil
ground hot pork sausage (or mycoprotein if vegetarian)
1 white onion, chopped
3 stalks celery, chopped
3 carrots, chopped
2 cloves garlic, chopped
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp red pepper flakes (if desired)
1 bay leaf
1 can kidney beans, drained
1 can cannellini beans, drained
28 oz can chopped tomatoes
4 c. beef broth (or vegetable broth if vegetarian)
1/2 c ditalini or acini de pepe pasta
kale, chopped

Steps:

  • Heat olive oil in dutch oven over medium heat. Add ground sausage and cook until brown (about 5 min). Add onions, celery, and carrots, and saute until soft (about 5 min). Add garlic, thyme, oregano, basil, red pepper flakes (if desired), bay leaf, and saute for 1 min. Stir in can of tomatoes (do not drain), kidney beans, and cannellini beans. Add broth and bring to a boil. Turn to low and simmer for about 45 min. Add pasta and kale and cook for 10 more min. Serve with grated parmesan cheese.

1 lb hot italian sausage
1 med onion, diced
3 cloves of garlic, minced
1 potato, diced
1 green bell pepper, diced
2 16 oz cans of diced tomatoes
2 small zucchini, diced
1 tb olive oil
1/4 cup chopped parsley
2 tb oregano
2 tb basil
1 tb fennel seeds
1 tb red pepper flakes
1 qt beef broth
16 oz can kidney beans
1 cup small macaroni
parmesan cheese for garnish

Steps:

  • Brown sausage in a small amount of oil in dutch oven. With a slotted spoon, remove sausage and drain on paper towl. Leave a small amount of oil in the pan and saute onion, garlic, potato and green pepper until soft. Add tomatoes with juice, spices and broth and simmer 30 minutes. Add kidney beans, macaroni and zucchini and simmer until pasta is tender. Serve with cheese to garnish.
