1/4 teaspoon chili powder

1/4 teaspoon cajun seasoning

Steps:

  • Preheat the oven to 400.
  • Combine all of the ingredients except for the mushrooms in a plastic freezer bag and mix to combine.
  • Dump the mushrooms into the bag and turn to make sure all of the mushrooms are evenly coated. (If you want it hotter, you can cut the mushrooms in halves or quarters to give you a greater surface area for the spices.).

1 1/2 teaspoons coarsely ground black pepper

1 medium red onion, finely chopped
1 teaspoon Kashmiri red chile powder

5 plum tomatoes, finely chopped

Steps:

  • Pat shrimp dry, sprinkle with 1 teaspoon pepper and set aside.

2 red chiles (such as Holland, Fresno, or Thai), thinly sliced
2 cups mint leaves, torn if large
2 Tbsp. fish sauce
½ cup coarsely chopped unsalted dry-roasted peanuts, divided
½ head of green cabbage, halved crosswise, leaves separated

Steps:

  • Heat 5 Tbsp. oil in a large nonstick skillet over medium-high until shimmering. Add mushrooms and cook, tossing often and reducing heat as needed to avoid scorching, until golden brown all over, about 15 minutes.

1 cup chopped onion
