SWEET AND SPICY KIDNEY BEANS

Sweet and Spicy Kidney Beans image

I came up with this on a night when I had nothing in the kitchen. I was trying to follow a low fat vegetarian diet at the time, and this actually was very satisfying. I couldn't call them barbecue beans, because...well, because they're not! It's very easy, quick and nutritious, almost like chili, but not quite. All measurements given are estimations.

Yield 2-4 serving(s)

Number Of Ingredients 15

olive oil
2 cloves garlic, minced
1 small onion, chopped
salt
pepper
1 teaspoon dried oregano
1 pinch cinnamon
1/4 teaspoon cumin
1/4 teaspoon chili powder
1 -2 ripe tomatoes, chopped
1 can kidney bean, with liquid
1 (4 ounce) can sliced black olives, drained
barbecue sauce, to taste (I used an organic brand, Wild Thymes Spicy Barbecue; it's chunky, hot and sweet, but not smoky)
red hot sauce, to taste
beer, maybe 1/2 cup (optional)

Steps:

  • Spray non stick skillet with olive oil to lightly coat (if using something that is not non stick, you may have to use more oil.) When hot, add onions.
  • After those just start to wilt, add garlic and dry spices.
  • Continue until aromatic and golden.
  • Add tomatoes and cook until they soften and release liquid.
  • Reduce heat and add remaining ingredients.
  • Simmer until slightly thickened.
  • If mixture gets too thick, add water.
  • Serve as a side dish or with noodles or rice.
  • I had them as a main course with no-yolk egg noodles and it was surprisingly good.

MATT'S BEAN CHILI WITH OKRA

Matt's Bean Chili with Okra image

While away from home, my husband learned how to cook. The one thing that he prides himself the most on is his chili with okra. I do have to say that even the mention of it makes my mouth water. There isn't a special ingredient or really anything unusual about the dish. It's just good.

Yield Makes 4 servings

Number Of Ingredients 7

2 (10-oz) packages frozen cut okra
1 tablespoon vegetable oil
1 medium onion, coarsely chopped
1 (14-oz) can diced tomatoes
1 fresh habanero chile, pierced 3 times with a fork
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Rinse okra in a colander under hot water.
  • Heat oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking, then sauté onion, stirring, until golden, about 3 minutes. Add tomatoes (including juice) and chile and boil, stirring, until tomatoes are softened and liquid is reduced by half, 5 to 10 minutes. Add okra and cook, gently stirring, until okra is tender, about 5 minutes. Stir in salt and pepper and discard chile.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients prepped and measured out. This will make the cooking process much smoother and easier.
  • Choose the Right Okra: Select young, tender okra pods for the best flavor and texture. Avoid okra that is woody or has blemishes.
  • Soak the Kidney Beans: Soaking the kidney beans overnight or for at least 8 hours will help to reduce their cooking time and make them more digestible.
  • Spice It Up: Adjust the amount of chili powder and cayenne pepper to your desired spice level. If you prefer a milder dish, start with a smaller amount and add more to taste.
  • Serve with Sides: Spicy okra and kidney beans is a great main course, but it can also be served with sides like rice, quinoa, or roti.
