SPICY ROASTED SWEET POTATOES WITH ORANGE & HONEY

Spicy Roasted Sweet Potatoes With Orange & Honey image

By Karen and Ben Barker, from Fine Cooking, issue #47. I have slightly adapted this recipe as I wanted a bit more spice to these sweet potatoes. This is a great addition to any holiday spread.

Provided by evelynathens

Categories     Yam/Sweet Potato

Time 1h

Yield 4 serving(s)

Number Of Ingredients 9

3 tablespoons unsalted butter, more for the pan
3 tablespoons honey
1/4 cup orange juice
1/4 teaspoon cayenne
1/4 teaspoon cumin
1/4 teaspoon smoked paprika (regular is fine if you don't have smoked)
4 medium sweet potatoes, preferably the same size and shape, peeled, halved crosswise, and quartered lengthwise (2 lb. total)
kosher salt
fresh ground black pepper

Steps:

  • Heat the oven to 400°F Lightly butter a large Pyrex or ceramic baking dish that can hold the sweet potato wedges in one layer.
  • In a small saucepan, melt the butter. Whisk in the honey, orange juice, and spices. Put the sweet potatoes in the buttered baking dish, add the honey mixture, and toss the pieces well to coat them thoroughly. Arrange the sweet potatoes in a single layer; sprinkle with salt and pepper.
  • Roast until the potatoes are browned and tender and the juices are bubbly and thickened, 45 to 55 minutes. To ensure even roasting, stir and baste several times with the pan juices, doing so more frequently toward the end of roasting. Serve at once.

SPICY CHIPOTLE-CINNAMON ROASTED SWEET POTATOES

Spicy Chipotle-Cinnamon Roasted Sweet Potatoes image

Looking for something a little different this Thanksgiving? Here's a nice way to liven up your menu or to ensure that you aren't the fifth person to bring candied yams to that family dinner.

Provided by Closet Foodie

Categories     Low Protein

Time 35m

Yield 6 serving(s)

Number Of Ingredients 5

3 large sweet potatoes or 3 large yams
2 tablespoons extra virgin olive oil
1 teaspoon ground cinnamon
1/2 teaspoon ground chipotle chile pepper (more or less to taste- but be warned, ground chipotle is hot)
salt

Steps:

  • Preheat your oven to 450 degrees.
  • Wash and scrub the sweet potatoes.
  • Cut each sweet potato into bite-sized chunks (make each piece roughly about an inch).
  • Add the sweet potato pieces, the extra virgin olive oil, cinnamon, and chipotle to a gallon-sized storage bag.
  • Close the storage bag and shake, making sure all of the spices are evenly distributed on the pieces (otherwise you might find out what happens when too much chipotle sticks to an individual piece).
  • Spread out the spiced sweet potato pieces in an even layer onto a baking sheet.
  • Salt to taste.
  • Bake the sweet potatoes in the oven for 15 minutes, then using a spatula to turn them, place them back in the oven for another 15-20 minutes. If you like them crisper, you can add a few minutes, just make sure to check on them so they don't burn. Serve them as they are, or you can dip them in ketchup like french fries.

SPICY MAPLE ROASTED PORK CHOPS AND SWEET POTATOES

Spicy Maple Roasted Pork Chops and Sweet Potatoes image

This was another successful, tossed-together kitchen creation. It is best described as spicy pork chops surrounded by roasted sweet potatoes coated in a spicy maple glaze. The sweet potatoes turn out soft on the inside and somewhat crispy on the outside, and the pork chops turn out juicy and spicy. DH and I enjoyed eating a bite of sweet potato with each bite of pork chop. I like to leave the skin on my sweet potatoes when roasting due to its nutritional value and crispy texture, but feel free to peel if desired. This truly is spicy. If you desire to tone down the heat, please do use less cayenne pepper.

SPICY ROASTED POTATOES

SPICY ROASTED POTATOES image

Categories     Potato

Yield 4 people

Number Of Ingredients 8

Ingredients
1 tablespoon coarse grain mustard
1 tablespoon olive oil
1 garlic clove, minced (or more)
1 teaspoon tarragon
1/4 teaspoon paprika
1/8 teaspoon red pepper (or more if you want them really spicy)
2 cups potatoes, cubed or cut into wedges

Steps:

  • 1 In a medium bowl, mix the mustard oil, garlic, tarragon, paprika, and red pepper into a smooth paste. 2 Cut the potatoes into 1 inch pieces. 3 Pat dry with paper towels. Add to the bowl and toss to coat. 4 Coat a baking sheet with cooking spray. Add the potatoes in a single layer. 5 Bake at 425 for 30-35 minutes or until tender. (Cooking time depends on how small you cut the potatoes). 6 Serve hot as a snack (like French fries) or a side dish.

Tips:

  • Choose the Right Potatoes: For the best results, select small to medium-sized potatoes, such as Yukon Gold or Red potatoes. These varieties hold their shape well and have a creamy texture when roasted.
  • Cut Potatoes Evenly: Cut the potatoes into uniform-sized pieces to ensure even cooking. Aim for 1-inch cubes or wedges.
  • Toss Potatoes Well: Before roasting, toss the potatoes in a mixture of olive oil, herbs, and spices. This helps create a crispy exterior and flavorful interior.
  • Roast Potatoes in a Single Layer: To achieve crispy, well-browned potatoes, make sure to spread them in a single layer on a baking sheet. Overcrowding the pan will result in steamed potatoes rather than roasted ones.
  • Don't Overcrowd the Pan: To ensure even cooking, avoid overcrowding the pan. If necessary, use multiple baking sheets to accommodate all the potatoes.
  • Roast Potatoes Until Crispy: Roast the potatoes at a high temperature (425°F or 220°C) for about 20-30 minutes, or until they are tender on the inside and crispy on the outside. Tossing the potatoes halfway through roasting helps promote even browning.
  • Season to Taste: Once the potatoes are roasted, season them with salt, pepper, and any other desired seasonings. Fresh herbs, such as parsley or chives, can also be added for extra flavor.

Conclusion:

Spicy roasted potatoes are a versatile and delicious side dish that can complement a variety of main courses. By following these tips, you can create crispy, flavorful roasted potatoes that will be a hit at your next meal. Experiment with different herbs, spices, and seasonings to find your favorite combination.

Whether you are looking for a classic roasted potato recipe or something with a spicy kick, these recipes have you covered.
