Number Of Ingredients 9

1 cup all-purpose flour
1 cup cornmeal
3 tablespoons sugar
3 teaspoons baking powder
1/4 teaspoon salt
3/4 cup chunky salsa
1/2 cup half-and-half cream
6 tablespoons butter, melted
1 large egg, lightly beaten

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In another bowl, combine the salsa, cream, butter and egg. Stir into dry ingredients just until moistened., Fill greased muffin cups three-fourths full. Bake at 400° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

2 (8 1/2-ounce) boxes corn muffin mix
1 cup milk
2 eggs, beaten
1 (8 3/4-ounce) can corn kernels, drained
1 canned chipotle pepper in adobo sauce, minced
1/2 cup grated Monterey jack

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, mix together all of the ingredients until just combined. Do not overmix. Divide the batter evenly in a 12-portion nonstick muffin tin. (If using a tin that isn't nonstick, spray with cooking spray).
  • Bake in the center of the oven until just golden and muffin springs back when gently pressed, about 20 minutes.

1 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon ground nutmeg
⅓ cup vegetable oil
¾ cup white sugar
1 egg
¾ cup milk
¾ cup white sugar
1 teaspoon ground cinnamon
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
  • In a large bowl, combine flour, baking powder, salt and nutmeg. In a separate bowl, beat together oil, 3/4 cup sugar, egg and milk. Stir egg mixture into flour mixture, just until moistened. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into a muffin comes out clean.

1 cup all-purpose flour
1/2 cup cornmeal
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
Pinch salt
1 egg, beaten
1/2 cup fresh or frozen corn
1/2 cup buttermilk
1/4 cup vegetable oil
1/4 cup shredded cheddar cheese
4 teaspoons diced pimientos
4 teaspoons salsa

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder, baking soda and salt. In another bowl, combine the remaining ingredients. Stir into dry ingredients just until moistened. 7 -8 ounces sweet Italian sausage (about 2)
2 cups flour
1/3 cup grated parmesan cheese
1 tablespoon baking powder
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon oregano
1 egg
14 ounces pizza sauce
2 tablespoons olive oil

Steps:

  • Remove sausages from casings, break into small pieces and fry in a skillet until cooked and browned. Drain sausage on paper towels, but save grease in skillet.
  • Heat oven to 400 degrees F. Grease muffin cups or use paper liners.
  • Mix flour, Parmesan cheese, baking powder, salt, pepper and oregano in a large bowl. Break egg into another bowl and beat. Add pizza sauce and mix well. Scoop the very thick batter into muffin cups. Bake 20 to 25 minutes or until firm on top. Cool 30 minutes before serving.
