Steps:
- Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
- Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.

Tips:
- Choose the right mushrooms: Not all mushrooms are created equal. For this recipe, you'll want to use a firm, meaty mushroom that can hold its own against the heat of the pan. Some good options include cremini mushrooms, portobello mushrooms, and shiitake mushrooms.
- Slice the mushrooms evenly: This will help them cook evenly. If you're using large mushrooms, you can cut them into quarters or smaller.
- Use a hot pan: This will help to sear the mushrooms and give them a nice, caramelized flavor.
- Don't overcrowd the pan: If you overcrowd the pan, the mushrooms will steam instead of sautéing. Cook the mushrooms in batches if necessary.
- Season the mushrooms well: Salt and pepper are essential, but you can also add other spices and herbs to taste. Some good options include garlic powder, onion powder, paprika, and chili powder.
- Cook the mushrooms until they are tender: This should take about 5-7 minutes. Don't overcook them, or they will become tough.
- Serve the mushrooms immediately: They are best when they are hot and fresh.
Conclusion:
Sautéed mushrooms are a delicious and versatile side dish that can be served with a variety of main courses. They are also a great way to add some extra vegetables to your diet. With just a few simple ingredients and a little bit of time, you can create a flavorful and satisfying dish that everyone will enjoy.
