2 pounds russet potatoes, peeled and quartered
Kosher salt
1 tablespoon extra-virgin olive oil
8 ounces fresh chorizo, casings removed
12 ounces ground beef
1 bunch scallions (white and light green parts only), chopped
2 cups frozen corn (preferably fire-roasted)
1 poblano chile pepper, chopped
2 tablespoons tomato paste
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
Freshly ground pepper
1 14.5-ounce can diced tomatoes with green chiles
1 cup low-sodium chicken broth
1/2 cup sour cream
3 tablespoons unsalted butter
1 1/2 cups shredded pepper jack cheese (about 6 ounces)

Steps:

  • Preheat the oven to 400 degrees F. Put the potatoes in a large saucepan, cover with cold water by 1 inch and season with salt. Bring to a boil, then reduce the heat and simmer until tender, 20 to 25 minutes.
  • Meanwhile, heat the olive oil in a large ovenproof skillet over medium heat. Add the chorizo and cook, breaking it up with a wooden spoon, until slightly browned, about 5 minutes. Add the beef and cook, breaking it up, until browned, about 5 minutes. Add all but 1 tablespoon of the scallions to the skillet along with the corn, poblano, tomato paste, cumin, chili powder, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the vegetables are slightly softened, about 5 more minutes. Add the tomatoes and chicken broth. Bring to a simmer, then reduce the heat to medium low; cook, stirring occasionally, until slightly thickened, about 10 minutes.
  • Drain the potatoes and let cool slightly. Return to the pot, add the sour cream and butter and mash well. Stir in the cheese and season with salt and pepper. Dollop the mashed potatoes on top of the meat mixture in the skillet, then spread with the back of a spoon. Transfer the skillet to the oven. Bake until bubbling around the edges and the topping is browned in spots, 25 to 30 minutes. Let rest 10 minutes, then sprinkle with the reserved scallions before serving.

2 red onions
1 thumb-sized piece of fresh ginger
2 cloves of garlic
1 red capsicum
olive oil
500 g lamb mince
1 heaped tablespoon garam masala
1 cinnamon stick
4 cardamon pods, (podded)
1 x 400g tin tomoatoes
1 kg potatoes
sea salt
freshly ground black pepper
unsalted butter
semi-skimmed milk
100 g frozen peas

Steps:

  • 1. Preheat the oven to 200°C. Peel and finely chop the onions, ginger and garlic, then deseed and finely slice the capsicum. Heat 1 tablespoon of olive oil in a large frying pan over a high heat. Add the mince, garam masala, cinnamon stick and cardamon pods and fry for around 5 minutes, or until cooked through and lightly browned, stirring regularly.
  • 2. Remove to a bowl and set aside, then place the pan back on the heat. Turn the heat down to medium and cook the onion, ginger and garlic for around 5 minutes, or until softened, then add the capsicum for a further 5 minutes. Tip in the tinned tomatoes, breaking them up with a spoon as you go, then pour in half a tin's worth of water and stir well. Turn the heat up to high and bring to the boil, then reduce to a low heat, stir the mince back into the pan and simmer for 25 minutes, or until thickened, stirring occasionally. 3. Meanwhile, peel the potatoes, cutting any larger ones into quarters and place in a large saucepan. Cover with water, add a good pinch of salt and cook for 20 minutes, or until tender. 4. Drain in a colander and leave to steam dry, then return the potatoes to the empty pan. Add a knob of butter, a splash of milk, a good pinch of salt and pepper, then mash well. Stir the peas through the mince, season with salt and pepper, then remove the cinnamon stick and transfer to an ovenproof baking dish (roughly 20 x 25cm). 5. Evenly spoon the mash over the top, smooth the surface slightly, then use a fork to fluff it up - this will give you great texture once it's cooked. Drizzle the pie with a little olive oil and season lightly. Cook in the oven for around 30 minutes, or until golden and bubbling.

A generous glug of olive oil
1 onion, very finely chopped
1 carrot, chopped
3 garlic cloves, chopped
1tsp cumin
½ tsp ground cinnamon
500g (1lb 2oz) minced lamb
200ml (7fl oz) chopped tomatoes
1tbsp tomato purée
2.5cm/1in fresh root ginger
2 green chillies (deseeded if you don't want it too spicy), chopped
1tbsp red wine vinegar
Sea salt and freshly ground black pepper
100g (3½ oz) frozen peas
250ml (8fl oz) boiling water
Ketchup, to serve

Steps:

  • Preheat the oven to 200°C (400°F, gas mark 6). Chop the potatoes for the mash into small cubes and simmer in a pan of salted water until tender (10-15 mins), then drain.
  • Meanwhile, heat the olive oil in a large pan and sauté the onion, carrot and garlic until they are soft and golden brown. Add the cumin and cinnamon and fry for a few minutes until they're beautifully fragrant. Add the mince and brown it off, breaking up any lumps with a wooden spoon.
  • Once the meat is well browned, pour in the tomatoes and tomato purée along with the ginger, chillies, vinegar and seasoning. Let the mixture bubble and cook for about 8 mins. Once the tomatoes have broken down, tumble in the peas, stir well, and then pour in the water. Bring to the boil, then cover and simmer for 25 mins.
  • Mash the potatoes, then beat in the butter and 2 egg yolks. Slowly pour in the milk and cream and mash again, ensuring you have a smooth, lump-free mash.
  • Transfer the meat to a pie dish and smooth the mash on top. Cook in the oven for 20-30 mins until brown and crispy.

500g pack lean minced lamb
1 onion , chopped
2 carrots , diced
2 tbsp garam masala
200ml hot stock (lamb, beef or chicken)
200g frozen peas
800g potatoes , diced
1 tsp turmeric
small bunch coriander , roughly chopped
juice half lemon , plus wedges to serve

Steps:

  • In a large non-stick frying pan, cook the lamb, onion and carrots, stirring often, until the lamb is browned and veg is starting to soften, about 8 mins. Add the garam masala and some seasoning and cook for a further 2 mins until fragrant. Pour in the stock, bring to the boil, tip in the peas and cook for a further 2 mins until the peas are cooked and most of the liquid has evaporated.
  • Meanwhile, cook potatoes in a large pan of salted water until just tender, about 8 mins. Drain well, return to the pan and gently stir in turmeric and coriander - try not to break up the potatoes too much.
  • Heat oven to 200C/180C fan/gas 6. Transfer the mince to a baking dish and top with the turmeric potatoes. Squeeze over the lemon juice, then bake for 30-35 mins until potatoes are golden. Serve immediately with extra lemon wedges on the side.

1 pound ground pork
1 small onion, chopped
2 garlic cloves, minced
1 cup cooked rice
1/2 cup pork gravy or 1/4 cup chicken broth
1/2 teaspoon salt
1/2 teaspoon dried thyme
CABBAGE LAYER:
1 medium carrot, diced
1 small onion, chopped
2 tablespoons butter or margarine
6 cups chopped cabbage
1 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
POTATO LAYER:
2 cups mashed potatoes
1/4 cup shredded cheddar cheese

Steps:

  • In a skillet over medium heat, brown pork until no longer pink. Add onion and garlic. Cook until vegetables are tender; drain. Stir in rice, gravy, salt and thyme. Spoon into a greased 11x7-in. baking dish. , In the same skillet, saute carrot and onion in butter over medium heat for 5 minutes. Stir in cabbage; cook for 1 minute. 2 tbsp sunflower oil
1 large onion , chopped
2 garlic cloves , crushed
small knob of ginger , peeled and granted
2 tbsp medium curry powder
500g minced beef or lamb
400g can chopped tomato
100g frozen pea
600g parsnip , peeled and chopped into large chunks
large potato , peeled and chopped into large chunks
1 green chilli , deseeded and chopped
large bunch coriander , chopped
2 tsp turmeric
juice of 1 lemon
50g butter

Steps:

  • For the sauce, heat the oil in a pan and add the onion. Cook until soft, add the garlic, ginger and curry powder, then cook until aromatic. Turn up the heat, add the mince, fry until browned, then add the tomatoes and simmer for 20 mins until thickened. A few mins before the end, add the peas.
  • Meanwhile, tip the parsnips and potatoes into a pan of cold water, bring to the boil, then cook for 10 mins. Drain, season and mash with the rest of the ingredients.
  • Heat oven to 220C/fan 200C/gas 8. Assemble the pies in individual dishes (or one large one) by placing some meat sauce on the bottom and topping with mash. Ruffle up the tops with a fork, then bake for 20 mins until golden and bubbling.

I got this recipe out of Taste of Home's "Weeknight Cooking Made Easy." This was SO tasty that we devoured all of the leftovers really quickly. I am posting the original recipe, but I do it a LITTLE differently. I use Rotel instead of diced tomatoes, and I didn't put in the olives. Enjoy!

1 lb ground beef
