Yield 7 bowls

Number Of Ingredients 7

1 tablespoon olive oil
1 (2 pound) ham steak, cubed
1 onion, chopped
1 (15 ounce) can pineapple chunks with juice, divided
1 apple, cored and chopped
1 tablespoon brown sugar
salt and pepper to taste

Steps:

  • Heat the oil in a large skillet over medium heat. Saute the ham and onion in the skillet for 5 minutes. Add 1/2 the amount of juice from the can of pineapple and allow it to be absorbed by the ham, about 1 to 2 minutes. Stir in the pineapple chunks, apple and brown sugar. Pour in any remaining pineapple juice only if mixture is getting too thick. Stir all ingredients together well and allow to heat through, about 5 minutes. Season with salt and pepper to taste.

This recipe is a great base, but I made a few changes to suit my taste. I added some ginger and garlic to the sauce, and I used a mix of fresh and frozen fruit.

The recipe was easy to follow, but the stir-fry turned out a bit bland. I think I'll add more sauce next time.

The stir-fry was a bit too sweet for my taste, but it was still enjoyable.

I've never had ham and fruit together before, but it totally works in this stir-fry. The pineapple and grapes add a nice sweetness that balances out the saltiness of the ham.
