1 pound triple washed spinach, stems removed
1/2 teaspoon ground or freshly grated nutmeg

6 tablespoons extra virgin olive oil
1 cup chopped fresh basil, divided
4 garlic cloves, minced
1/2 teaspoon dry crushed red pepper
1/2 cup dry white wine
1 1/2 cups grated pecorino romano cheese, divided

Steps:

  • Cook linguine in large pot of boiling salted water until just tender but still firm to bite.
  • Drain, reserving 1 cup pasta cooking liquid. Return pasta to same pot.
  • Meanwhile, heat olive oil in heavy large skillet over medium-high heat.

1 pinch dried chili pepper flakes
1/4 cup flat leaf parsley
salt
