PINEAPPLE-JALAPEñO RELISH

Yield Makes about 5 cups

Number Of Ingredients 5

1 1/2 large ripe pineapples, peeled, cored, finely chopped (about 5 cups)
1 small red bell pepper, chopped (about 1 cup)
3 tablespoons honey
2 jalapeño chiles, seeded, minced
3/4 teaspoon oriental sesame oil

Steps:

  • Combine all ingredients in large bowl. Season to taste with salt and pepper.
  • Cook mixture in large nonstick skillet over medium-high heat until almost all liquid evaporates, stirring occasionally, about 4 minutes. Cool and serve at room temperature. (Relish can be made 1 day ahead; refrigerate. Bring to room temperature before serving.)

Tips:

  • To ensure the tilapia fillets remain tender, avoid overcooking them. The ideal internal temperature is 145°F (63°C), as indicated by a flaky texture when gently prodded with a fork.
  • If you prefer a milder relish, reduce the number of jalapeños or remove the seeds before mincing. Alternatively, substitute a milder chili pepper, such as poblano or Anaheim.
  • For a more pronounced pineapple flavor, use fresh pineapple chunks instead of canned. If using canned pineapple, be sure to drain and rinse the chunks thoroughly before adding them to the relish.
  • Feel free to adjust the amount of lime juice in the relish to your taste preference. Start with a small amount and gradually add more until you achieve the desired balance of flavors.
  • Serve the tilapia with a variety of sides to complement the spicy relish. Some suggestions include steamed rice, roasted vegetables, or a fresh green salad.

Conclusion:

This Spicy Tilapia with Pineapple-Jalapeño Pepper Relish is a delightful and flavorful dish that combines the delicate taste of tilapia with the vibrant flavors of a tropical-inspired relish.
