1 package (19 ounces) frozen cheese tortellini
2 tablespoons olive oil, divided
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
2 teaspoons Italian seasoning, divided
1/2 teaspoon salt
1/4 teaspoon pepper
1 large onion, chopped
1 habanero pepper, seeded and finely chopped
3 garlic cloves, minced
1 can (14-1/2 ounces) fire-roasted diced tomatoes, drained
2 cups heavy whipping cream
1/2 cup shredded Italian cheese blend
1/3 cup chopped fresh basil

Steps:

  • Cook pasta according to package directions; drain., Meanwhile, heat 1 Tbsp. oil in a Dutch oven over medium-high heat. Add chicken, 1 tsp. Italian seasoning, salt and pepper; saute until meat is no longer pink, about 5 minutes. Remove from pan. , In the same pan, add onion, habanero pepper, garlic and the remaining Italian seasoning and oil; reduce heat to medium. Cook and stir until onion is tender, about 5 minutes. Add tomatoes; cook and stir until slightly thickened, about 2 minutes. Stir in cream; bring to a boil. Add tortellini, chicken and cheese; heat through. Top with basil to serve.

1 pound bulk hot or mild Italian sausage
1 package (9 ounces) refrigerated cheese tortellini
1 can (14-1/2 ounces) fire-roasted or Italian diced tomatoes
1 teaspoon Italian seasoning
3 cups fresh spinach, thinly sliced

Steps:

  • In a 6-qt. stockpot, bring broth to a boil. Carefully drop sausage by heaping teaspoonfuls into boiling broth. Add tortellini, tomatoes and Italian seasoning; return to a boil., Reduce heat; simmer, uncovered, 8-10 minutes or until sausage is cooked through and pasta is tender. Stir in spinach until wilted. 1 (14 ounce) can reduced-sodium chicken broth
1 (14 ounce) can roasted-garlic seasoned chicken broth
1 (9 ounce) package refrigerated cheese tortellini or 1 (9 ounce) package mushroom tortellini
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon minced garlic
2 tablespoons chopped sun-dried tomatoes
2 tablespoons chopped shallots
2 cups packed Baby Spinach
1 dash ground cayenne pepper
1/8 teaspoon ground black pepper
1 tablespoon basil
1 tablespoon oregano
2 tablespoons freshly grated asiago cheese

Steps:

  • In medium saucepan, bring chicken broth to a boil over high heat.
  • Add tortellini, reduce heat to medium-low and simmer about 5 minutes. Gently stir in diced tomatoes, simmer 3 minutes until tortellini is tender, stir in sundried tomatoes, shallots.
  • Stir in basil, cayenne pepper, oregano and black pepper and simmer another 2 minutes.

I have adapted this recipe after trying many different variations.The spicy clamato gives it lots of zip.Different vegetables work well. Just add your favorites. When I submitted this recipe I cut the ingredients in half as I usually make a huge batch and freeze half.

1 lb hot Italian sausage
1 teaspoon olive oil
1 large onion
1 clove garlic, chopped
1 cup celery
1 cup chopped carrot
1 cup mushroom, sliced
2 teaspoons italian seasoning
1 (28 ounce) can diced tomatoes, undrained
2 cups chicken broth
3 cups spicy clamato juice
1 can red kidney beans, drained
1 package frozen cheese tortellini

Steps:

  • Steam sausage for 15 minutes to reduce fat content.
  • Let cool, and slice into bite sized pieces, removing casing if desired.
  • Spray large pot with no-stick spray.
  • Place sliced sausage in large pot with oil and let brown lightly. Remove sausage and pour off excess oil.
  • In same pot add onions,garlic, celery, carrots, and mushrooms until softened but not browned, then add back sausage.
  • Stir in seasoning, tomatoes, stock and clamato juice.
  • Bring to boil and simmer covered for 30 minutes.
  • Add frozen pasta and kidney beans; simmer covered for 20 minutes.
  • If too thick, dilute with water or more broth.
  • Season to taste.
