1 (16 ounce) package lasagna noodles
2 teaspoons olive oil
⅔ cup diced red bell pepper
⅔ cup diced orange bell pepper
⅔ cup diced yellow bell pepper
⅔ cup diced green bell pepper
1 small yellow onion, diced
2 (14.5 ounce) cans diced tomatoes
1 (6 ounce) can tomato paste
1 ½ cups water
1 dash crushed red pepper flakes
¼ cup grated Parmesan cheese
1 (15 ounce) container ricotta cheese
1 (8 ounce) package shredded mozzarella cheese
4 eggs
¼ teaspoon black pepper
¼ teaspoon dried oregano, crushed
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook lasagna pasta in boiling water for 8 to 10 minutes, or until al dente. Drain, rinse with cold water, and place on wax paper to cool.
  • Cook bell peppers and onion in olive oil in a large sauce pan until onions are translucent. Stir in diced tomatoes, tomato paste, water, and red pepper flakes. More red pepper flakes can be added if spicier sauce is preferred. Simmer for 30 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). In a medium bowl, combine Parmesan cheese, ricotta cheese, mozzarella cheese, eggs, black pepper, and oregano.
  • Place a small amount of sauce in the bottom of a 9x13 inch baking dish. Reserve 1/2 cup of the sauce. Place three lasagna noodles lengthwise in pan. Layer some of the cheese mixture and the vegetable sauce on top of noodles. Repeat layering with remaining ingredients, ending with noodles. Spread reserved sauce over top of noodles. Sprinkle with grated Parmesan cheese, if desired.
  • Cover dish with foil, and bake for 40 minutes or until bubbly. Remove foil during last 10 minutes of baking.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in lasagna and return to a boil. Cook uncovered, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  • While the noodles are cooking, combine crumbles, sausage, meatballs, squash, carrots, onion, mushrooms, oil, garlic powder, pepper, oregano, thyme, and fennel in a large bowl; stir until mixed. Combine marinara sauce and diced tomatoes in a second bowl.

1/4 cup olive oil
1 medium sweet red pepper, julienned
1 medium carrot, shredded
1 small onion, chopped
5 plum tomatoes, chopped
1-1/2 cups sliced fresh mushrooms
1 small yellow summer squash, cut into 1/4-inch slices
1 small zucchini, cut into 1/4-inch slices
3 garlic cloves, minced
1 can (12 ounces) tomato paste
1 cup vegetable broth
2 tablespoons brown sugar
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
6 lasagna noodles
1 large egg, lightly beaten
1 cup ricotta cheese
1 cup shredded part-skim mozzarella cheese
1/3 cup shredded Parmesan cheese

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add red pepper, carrot and onion; cook and stir until crisp-tender. 1 9-oz.) pkg. frozen spinach, thawed, squeezed to drain well
1/3 cup grated Parmesan cheese

8 oven-ready lasagna noodles (each about 7x3 inches)
1 (4-oz.) can mushroom pieces and stems, drained
8 oz. (2 cups) shredded mozzarella cheese

Steps:

  • Spray 12x10-inch sheet of foil with nonstick cooking spray. In medium bowl, combine pasta sauce and zucchini; mix well. In another medium bowl, combine cottage cheese, spinach, Parmesan cheese and oregano; mix well.
  • Spread 1/4 cup sauce mixture in ungreased 8-inch square (2-quart) glass baking dish. Top with 2 lasagna noodles. Spread about 1/2 cup sauce mixture over noodles. Steps:

  • Pre-Heat your oven to 210 degrees.
  • Slice up your courgette , aubergine , tomatoes , mushrooms , pepper and onion - Rinse under running water.
  • Add to the roasting tin with a dash of oil - sprinkle of Salt and Pepper to taste and bang it in the oven for 10-15 mins or until softened - NOT SOGGY - whilst these are cooking go to next step.
  • So whilst the veg is roasting add your tin of tomatoes to a large pan, add in a tablespoon of italian herbs and your tomato puree - salt and pepper and veg stock - heat this gently until bubbling nicely.
  • After your 15 mins remove veg from the oven and transfer to the pan of tomatoes. stir together gently.
  • In 2 individual lasagne dishes - or a large one - layer some of your veggy mix to the bottom. Then a layer of DRY lasage sheets - I then added a sprinkle of cheese and build up another layer of veg mix and layer of pasta - keep going as you like making sure you end with your veg mix.
  • transfer this to the oven for 15 minutes until the pasta has softened. After 15 minutes add your cheese mix to the top and bake for a further 5 minutes or until your cheese is melted.
  • remove from oven and leave to stand for 5 minutes
  • Serve with Garlic Bread drizzled with balsamic vinegar or a nice crisp salad.

1 glass red wine
2-3 bay leaves
1 tbsp dried mixed herbs
2 whole chillies, finely chopped
1 yellow pepper, chopped
500g mince beef

Steps:

  • Heat up some oil in a large frying pan and fry bacon lardons until crisp. Reduce the heat slightly and add the onions, celery, carrots, pepper and garlic, and fry for about 10 minutes until the vegetables have softened.
  • Increase the heat again and add the mince. Fry until the mince has browned all over, stirring continuously.
  • Pour in the tinned tomatoes, add the bay leaves, mixed herbs, stock cube, wine and cherry tomatoes. Mix well and stir in the chopped chillies, including seeds, and mix everything together.
  • Bring to a gentle boil and reduce heat. Cover and leave to cook for around an hour or so, until thickened, stirring occasionally.
  • While the bolognese is cooking, pour milk into a saucepan. Pierce each onion halve with 2 cloves. Place the onion and bay leaves in the saucepan and bring to the boil. Once boiling, remove from heat and allow to infuse for 20-25 minutes.
  • In another pan, melt the butter and stir in the flour. Continually stir until a paste forms. This is called a roux. Cook this for around 2 minutes.
  • After the milk has been infusing for 20-25 minutes, remove the onion and bay leaves. Slowly add the milk to the roux, continuously stirring. Cook for around 10 minutes until the white sauce thickens.
  • In a lasagne dish, layer up the lasagne with a layer of the bolognese followed with the pasta sheets, top with white sauce and more pasta sheets. Again, to with a layer or bolognese, pasta sheets, white sauce, pasta sheets. Finish with a final layer of the bolognese, pasta sheets, white sauce and top with the grates cheese.
  • Place lasagne on the centre shelf of the oven, pre heated to 185°C, and bake for 30 minutes.
  • Dish the lasagne up and serve with a side salad.

  • For a richer flavor, use a combination of cheeses, such as ricotta, mozzarella, and Parmesan.
  • If you don't have lasagna noodles, you can use no-boil lasagna noodles or even eggplant or zucchini slices.
