Steps:
- Wash spinach thoroughly and tear into pieces.
- Heat oil in large soup pot over medium high heat. Add bacon, if desired, cooking until lightly browned. Add garlic and onion and cook until browned, about 10 to 15 minutes.
- Stir in broth, tomatoes and seasoning and bring to a boil.
- Add tortellini and simmer just until tender, about 7 to 10 minutes.
- Add spinach, salt and pepper to taste and beans. Heat until warmed through.
- Top with Parmesan cheese and serve.
Tips:
- Use fresh spinach: Fresh spinach has a more vibrant flavor and texture than frozen spinach. If you're using frozen spinach, be sure to thaw it completely before adding it to the soup.
- Don't overcook the tortellini: Tortellini should be cooked until it is al dente, or slightly firm to the bite. Overcooked tortellini will become mushy and lose its flavor.
- Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality broth. You can use chicken broth, vegetable broth, or beef broth. If you're using a store-bought broth, be sure to choose one that is low in sodium.
- Add some vegetables: Vegetables add flavor, texture, and nutrients to the soup. You can add any vegetables that you like, such as carrots, celery, onions, or zucchini.
- Season the soup to taste: Season the soup with salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a dollop of sour cream for a finishing touch.
Conclusion:
Spinach and tortellini soup is a delicious and easy-to-make soup that is perfect for a weeknight meal. It's also a great way to use up leftover spinach and tortellini. With a few simple ingredients and a little bit of time, you can make a delicious and satisfying soup that the whole family will enjoy.
