3 tablespoons butter
1 cup onion, chopped
10 ounces Baby Spinach
1 tablespoon water
2 eggs, beaten
1 cup milk
1 1/2 cups parmesan cheese, grated
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a large skillet and suate onions until tender. Add spinach and water and cook until wilted. Drain well, insuring that all water is removed.
  • In a mixing bowl, whisk together the eggs, milk and 3/4 cup of the cheese. Add seasonings, then stir in the spinach mixture.
  • Pour into a greased casserole container and sprinkle top with remaining cheese.
  • Bake uncovered for 30-40 minutes, until top browns.

48 oz thawed, well drained, frozen spinach
1 qt heavy cream
3 c grated parmesan cheese, divided
2 Tbsp minced garlic
1 tsp crushed red peppers

Steps:

  • 1. Set out your spinach in a colander about 2 hours before preparing dish to allow it to thaw and drain well.Squeeze out as much moisture as you can.
  • 2. pre heat oven to 350.In a sauce pan slowly heat cream until it is just starting to steam. Add 2 cups of cheese and stir until melted. Add Garlic and crushed red peppers. Add spinach and mix thoroughly.
  • 3. Spoon spinach mixture into a buttered 9x13 inch casserole dish.Sprinkle top with remaining cup of cheese and bake for 45 minutes or until bubbling and top is slightly browning. let stand for 10 minutes before serving.
