Tips:

  • For the best flavor, use fresh baby spinach. If you only have mature spinach, remove the tough stems before cooking.
  • Pine nuts can be toasted in a skillet over medium heat until golden brown and fragrant. This will enhance their flavor and make them more crunchy.
  • If you don't have ricotta cheese, you can substitute cottage cheese or cream cheese. However, ricotta cheese will give the sauce a lighter and fluffier texture.
  • To make the sauce even creamier, you can add a splash of milk or cream.
  • This dish is best served immediately, but it can be reheated in the microwave or in a saucepan over low heat.

Conclusion:

This spinach penne with ricotta and pine nuts is a quick and easy weeknight meal that is sure to please the whole family. It is also a great way to get your kids to eat their vegetables! The creamy ricotta sauce is delicious and flavorful, and the pine nuts add a nice crunch. This dish is also very versatile and can be easily customized to your liking. For example, you can add cooked chicken, shrimp, or vegetables to the sauce. You can also use different types of pasta, such as spaghetti or linguine.
