1 cup spinach
1 cup artichoke heart, chopped
1 tablespoon olive oil
2 cloves garlic, minced
2 cups marinara sauce
1 cup shredded mozzarella cheese
1 cup shredded parmesan cheese
1 teaspoon salt
½ teaspoon pepper
fresh parsley, for garnish

Steps:

  • Boil the lasagna noodles until they are soft but not fully cooked, for about 10 minutes. Drain and set aside.
  • In a sauté pan over medium heat, saute the spinach with the olive oil and a pinch of salt. Set aside.
  • Preheat oven to 350˚F (180˚C).
  • In a medium-sized bowl, mix the ricotta, cooked spinach, chopped artichokes, garlic, ½ of the mozzarella, ½ of the parmesan, salt, and pepper.
  • Spoon some of the mixture onto the lasagna noodle and roll tightly.

1 tablespoon olive oil
1 package (20 oz) ground turkey
4 cloves garlic, chopped

1 jar (25.5 oz) Muir Glen™ organic Italian herb pasta sauce
2 boxes (9 oz each) frozen spinach, thawed, squeezed to drain
1 cup shredded carrot, if desired
1 container (15 oz) whole milk ricotta cheese
2 eggs
1 jar (25.5 oz) Muir Glen™ organic Italian herb pasta sauce
2 cups shredded mozzarella cheese (8 oz)
1/2 cup julienne-cut fresh basil leaves

Steps:

  • In 5-quart Dutch oven, cook lasagna noodles as directed on package. Drain; rinse with hot water. Drain well.
  • Meanwhile, in 12-inch nonstick skillet, heat olive oil over medium-high heat. Add turkey, garlic and Italian seasoning; cook 5 to 6 minutes, stirring frequently, until turkey is no longer pink. Stir in 1 jar pasta sauce; heat to boiling. Reduce heat to low; cook 10 minutes, stirring occasionally. Transfer to medium bowl; cool 10 minutes.
  • In medium bowl, mix spinach, carrot, ricotta cheese and eggs.

Roll up firmly toward unfilled end. Line 15x10x1-inch pan with foil. Place roll-ups seam side down in pan; cover loosely with foil. Freeze about 30 minutes or until firm.
  • Place frozen rolls in two labeled 1-gallon airtight freezer bags. Freeze up to 3 months.
  • To bake 16 lasagna roll-ups, spray two 13x9-inch (3-quart) glass baking dishes with cooking spray. Remove roll-ups from freezer bag; place 8 in each baking dish. Cover with foil; thaw in refrigerator at least 8 hours but no longer than 24 hours.
  • Heat oven to 350°F. Divide remaining jar of pasta sauce between baking dishes, pouring over and down sides of roll-ups. Cover tightly with foil; bake 40 to 50 minutes or until hot and bubbly. Remove foil; sprinkle each dish with 1 cup mozzarella cheese; bake 3 to 5 minutes longer or until cheese is melted. Let stand 5 minutes before serving. Top with basil.

1 cup grated mozzarella cheese (or to taste)

Steps:

  • Set oven to 350 degrees F.
  • Grease an 11 x 7-inch or a 13 x 9-inch baking dish.
  • In a skillet melt butter over medium heat; add in the onions and saute stirring with wooden spoon for about 8 minutes or until lightly golden brown (adding in the garlic the last 2 minutes of cooking).
  • Add in drained spinach and saute for 2 minutes more mixing with a wooden spoon; transfer to a large mixing bowl.
  • Add in the cooked chicken, ricotta cheese, mozzarella cheese, Parmesan cheese, seasoned salt, egg and pinch nutmeg; mix with wooden spoon until well combined, then season with black pepper to taste.
  • Place the cooked noodles on a wax paper lined flat surface.
  • Evenly divide the ricotta mixute into eight scoops on to a plate.
  • Spread about half of the alfredo sauce into the bottom of the baking dish.
  • Spread one scoop onto one cooked lasagna noodle, then spread out with a spoon to cover the noodle completey.
  • Roll up starting at the short end.
  • Place seam side down on top of the sauce.
  • Repeat same method with remaining 7 noodles.
  • Sprinkle about 1 cup grated mozzarella cheese (or to taste) on top of the noodles, then drizzle the remaining alfredo sauce on top.

1 small yellow-skinned onion, finely chopped
2 cloves garlic, minced

One 10-ounce package frozen chopped spinach, defrosted and squeezed dry
Salt and pepper
1/4 teaspoon ground nutmeg or the equivalent of freshly grated
2 cups part skim ricotta
8 curly edge lasagna noodles, cooked to al dente (12 to 14 minutes)
1 cup fat free chicken broth
8 ounces Gorgonzola, crumbled
1/2 cup (3 turns around the pan) heavy cream

2 small or 1 large bundle asparagus
4 vine-ripe tomatoes
Extra-virgin olive oil

Steps:

  • In a medium skillet over moderate heat, saute mushrooms, chopped onions, and garlic in oil until mushrooms give off their juices and darken and onions are tender, about 7 or 8 minutes. Season with salt and pepper; the salt will help draw water out of the vegetables as they cook.
  • Add dry chopped spinach to the pan and heat through for 1 minute. Adjust seasonings with salt, pepper, and a little nutmeg. Add ricotta and stir into mixture to heat cheese through, 1 minute longer. Remove pan from heat but leave in the warm skillet.
  • Heat broth in a small pan over moderate heat. Melt Gorgonzola into broth and bring liquid to a bubble. Stir in cream and thicken sauce 2 minutes.
  • Place cooked lasagna noodles on a large work surface or cutting board. Spread lasagna noodles with a layer of spinach-mushroom filling. Roll up pasta and arrange the 8 bundles in a shallow flameproof casserole dish. Pour warm sauce over roll-ups and top with mozzarella. Place casserole under broiler to melt cheese. Serve with Steamed Asparagus and Broiled Tomatoes.
  • While you boil your lasagna noodles, place fresh asparagus tips in a small colander over the boiling water in the pasta pot. Place a lid on the colander and steam asparagus while you are cooking your pasta for 4 minutes or until tips are just tender.
  • Split 4 vine-ripe tomatoes across the center and drizzle with extra-virgin olive oil, salt, and pepper. Broil tomatoes.
  • Serve along side your completed casserole. Top with any fresh herb you have on hand: basil, thyme, or rosemary.

16 cremini mushrooms, cleaned and finely chopped in food processor or 3 portabella mushrooms
1 small yellow onion, finely chopped
4 garlic cloves, minced
2 tablespoons extra virgin olive oil
1 (10 ounce) package frozen chopped spinach, defrosted and squeezed dry
2 cups part-skim ricotta cheese
8 curly edge lasagna noodles, cooked al dente
1 cup fat free vegetable stock or 1 cup fat-free chicken broth
8 ounces gorgonzola, crumbled
1/2 cup heavy cream
1 cup shredded mozzarella cheese

Steps:

  • Sauté mushrooms, chopped onion and garlic in oil over med heat, until mushrooms give off their juice and onion is tender- 7-8 minutes.
  • Season with salt and pepper.
  • Add dry chopped spinach to the pan and heat through.
  • Add ricotta, adjust salt and pepper and heat through.
  • Remove from burner, but leave in warm skillet.
  • Heat broth in small sauce pan.
  • Add Gorgonzola into broth, and bring to a bubble.
  • Stir in cream and thicken about 2 minutes.
  • Place cooked noodles on work surface.
  • Place a dollop of spinach mixture on one end of noodles and roll each one up.
  • Arrange rolled packages, seam side down, in shallow casserole dish.
  • Pour warm sauce over and top with mozzarella.
  • Place casserole under broiler to melt mozzarella and slightly brown.

1 (16 ounce) package lasagna noodles
2 tablespoons butter
⅔ cup chopped red bell pepper
⅔ cup chopped fresh mushrooms
½ cup chopped onion
2 cups small curd cottage cheese

2 eggs, lightly beaten
6 tablespoons grated Parmesan cheese, divided
1 teaspoon black pepper
2 (15 ounce) cans tomato sauce
2 teaspoons dried marjoram
1 teaspoon white sugar
½ teaspoon garlic powder
⅔ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of water to a boil. Add lasagna pasta and cook for 8 to 10 minutes or until al dente; drain and pat dry.
  • In a large skillet saute in butter the red bell pepper, mushrooms and onion until tender. In a bowl combine the sauteed vegetable mixture, cottage cheese, spinach, eggs, 4 tablespoons of the Parmesan cheese and pepper; mix well.
  • In a large skillet, heat tomato sauce, marjoram, sugar and garlic powder for 5 minutes.
  • Spread 1/3 cup filling on each noodle. Roll up and place in greased 9x13 baking dish. Pour tomato sauce mixture over lasagna rolls. Sprinkle with mozzarella cheese and remaining Parmesan cheese. Cover and bake in a preheated oven for 40 minutes.

2 (6 ounce) boneless skinless chicken breast halves
kosher salt
fresh ground black pepper
4 slices swiss cheese
4 slices black forest ham (thinly sliced)
1/2 cup Baby Spinach
1 tablespoon extra virgin olive oil
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup chicken stock
1 tablespoon Dijon mustard
1/2 lemon, zested and juiced
1/8 cup fresh flat-leaf parsley, chopped

Steps:

  • Halve the chicken breasts horizontally separating each into 2 cutlets.
  • Place cutlets in a freezer plastic storage bag and pound into 1/8-inch thick cutlets.
  • Arrange the 4 cutlets on work surface. Season cutlets with salt and pepper on the side facing up. Cover each piece of chicken with 1 slice of ham and 1 slice of cheese. At the larger end of the breast, place a small bundle of baby spinach. Tightly wrap the chicken around the ham, cheese and spinach. The rolls should stay together, but if needed, secure with a toothpick.
  • Heat about 1 tablespoon extra-virgin olive oil in a nonstick skillet over medium heat. When the oil is hot, use tongs to add the chicken roll-ups to skillet with the seam side down. Season the roll-ups with salt and pepper.
  • Cover the pan loosely with tin foil and cook 4 to 5 minutes, turn roll-ups over and cook the other side 4 to 5 minutes. Remove the cooked roll ups to a serving plate. If toothpicks were used, remove the toothpicks before serving.
  • Add 2 tablespoons of butter and 2 tablespoons flour to the pan used to cook the chicken, stirring well until there are no lumps.
  • Slowly stir in the chicken stock, Dijon mustard, and lemon zest, scraping up any drippings from the bottom of the pan. Simmer 1 minute.
  • Remove pan from the heat, add the lemon juice and parsley and spoon over chicken.

3 teaspoons olive oil
1 garlic clove, minced
5 ounces fresh spinach
1/2 cup reduced-fat feta cheese
2 teaspoons lemon juice
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon black pepper
1/2 teaspoon oregano leaves
4 (4 -6 ounce) boneless skinless chicken breasts, pounded to 1/4-1/2 inch thickness
2 large eggs, beaten
3/4 cup panko breadcrumbs
nonstick cooking spray
1 cup crushed tomatoes (they recommend Furmano's Chunky Crushed Tomatoes with Basil, Garlic and Oregano)

Steps:

  • Preheat oven to 350.
  • Heat 1 tsp olive oil in a large skillet over Medium heat.
  • Add garlic and saute 1-2 minutes or until fragrant.
  • Add spinach and cook until wilted, about 3-5 minutes, tossing constantly; remove from heat.
  • In a medium bowl, combine spinach, feta, lemon juice, crushed red pepper, black pepper and oregano; set aside.
  • Dredge each chicken breast into beaten egg, then panko breadcrumbs.
  • Spread one quarter of the spinach/feta mixture over chicken, then carefully roll up and secure with 2 toothpicks.
  • Repeat with remaining chicken breasts.
  • Heat remaining 2 tsp olive oil in a large skillet.
  • Add rolled chicken breasts to skillet and cook about 5-7 minutes or until browned on all sides.
  • Remove from heat and place in a square baking dish, sprayed with nonstick cooking spray.
  • Bake 20-25 minutes or until minimum internal temperature reaches 165.
  • Top with tomatoes and serve. Warm the tomatoes first, if desired.

3/4 cup parmesan cheese, grated, divided

6 lasagna noodles, cooked and drained
2 (15 ounce) cans seasoned tomato sauce or 2 (15 ounce) cans spaghetti sauce

Steps:

  • In a bowl, combine the spinach, mozzarella, cottage cheese, 1/2 cup Parmesan and egg.
  • Spread a heaping 1/3 cupful over each noodle.
  • Roll up and secure with toothpicks.
  • Place seam side down in an 11 x 7 x 2 inch baking dish coated with non-stick cooking spray.

Steps:

  • Cook bacon in heavy large skillet over medium heat until crisp; drain. Crumble bacon into medium bowl; stir in spinach and next 5 ingredients.
  • Heat 1 tortilla in large skillet over high heat until warm and pliable, about 1 minute per side. Transfer to work surface. Spread 1/3 of filling over tortilla, leaving 1/2-inch border. Roll up tightly, enclosing filling. Wrap in plastic. Repeat with remaining 2 tortillas and filling. Chill until filling is firm, at least 1 hour or up to 4 hours.

1 tablespoon olive oil
2 large cloves garlic, minced
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup ricotta cheese
1 cup shredded mozzarella cheese

1 (14 ounce) jar spaghetti sauce
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook lasagna in boiling water until cooked through but firm to the bite, about 8 minutes; drain and lay noodles flat onto a flat surface.
  • Heat olive oil in a skillet over medium heat. Cook and stir garlic in hot oil until fragrant, about 2 minutes. Transfer garlic to a large bowl; add spinach, ricotta cheese, mozzarella cheese, and salt. Stir mixture until evenly combined.

EASY SPINACH-BACON TORTILLA ROLL-UPS

These are SOOO DELICIOUS! Perfect to serve at a get together or for a weekend snack. Plan ahead the stuffed tortillas must be chilled for about about 5 hours before slicing to firm up and blend the flavors. If you slice the rolls into about 3/4-inch slices you should get about 28-30 slices, this recipe can easily be doubled. Prep time includes chilling time. Just to let you know, I have even stuffed, rolled and sliced the tortillas then froze the slices until ready to be baked, it's a huge time-saver if you are serving them for a get together as everything is done in advance, there great to have handy in your freezer for a snack also. The water chestnuts are optional, I like to add them in!
