This is my own creation after buying some white Stilton with blueberries on impulse and having no idea what to do with it! We've also tried this with white Stilton with mangoes, apricots or cranberries, all wonderful! This is more of an idea than a recipe, so feel free to substitute nuts, fruits and dressing to taste. I've also used strawberries and almonds with this. *Note: White Stilton is different from regular Stilton, it is not a blue cheese at all because it has not gone through the process that causes the blue veining that gives blue cheese its distinctive taste. I would describe it as kind of like feta but a little sweeter, especially with the addition of the fruit.

1 package triple-washed spinach
3 to 4 handfuls pecan halves
2 tablespoons vegetable oil
A few pinches sugar
A few pinches salt
1/2 cup olive oil
1/4 cup sherry vinegar
2 small shallots, minced
Kosher salt and freshly ground black pepper
1 small wedge Gorgonzola, crumbled (about 2 ounces)

Steps:

  • Preheat oven to 400 degrees F.
  • Place spinach in serving bowl.
  • Toss pecans with vegetable oil, sugar and salt. Lay out on baking sheet. Roast until shade darker and aromatic, about 7 to 8 minutes. Set aside.
  • Make dressing by combining olive oil, vinegar, shallots and salt and pepper in a bowl and whisking together or place in sealable container and shake.

This is another recipe from the "Creme de Colorado" cookbook, it is the best Spinach salad I've ever had! Very easy to prepare, in fact, it can all be prepared ahead and just tossed together when ready to eat. This is also the best Poppyseed dressing I've ever eaten. I fixed this last night and hardly ate anything BUT the salad, it's that good! Recipe makes 8 side salad servings, but if you want it as a main dish type salad I would figure on half the servings.

8 cups Baby Spinach
1 papaya, peeled and cut into 1/2 , pieces 1 mango, peeled and cut into 1/2, pieces
1 cup strawberry, sliced

1 1/2 teaspoons grated onions
