These taste like Peanut Butter cups. They are fun to make and kids really get a kick out them. A bit time consuming, but the end-product is worth it.

1 ½ cups creamy peanut butter
½ cup butter, softened
2 ½ cups confectioners' sugar, sifted
1 tablespoon vanilla extract
12 ounces white chocolate, chopped
2 tablespoons shortening
2 drops blue food coloring
½ cup miniature semisweet chocolate chips
2 drops red food coloring

Steps:

  • Beat the peanut butter and butter with an electric mixer in a large bowl until smooth. Beat in the sugar and vanilla. Cover and refrigerate for 30 minutes. Roll chilled dough into small, eyeball-sized balls and place on 2 baking sheets lined with wax paper. Refrigerate for another 30 minutes.
  • Melt the white chocolate and shortening in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Dip each eyeball into the white chocolate and transfer to the waxed paper until the chocolate has set. You can chill them in the refrigerator.
  • Stir a few drops of blue food coloring into the remaining melted white chocolate. Make a round "iris" on the top of the cooled eyeball and press a mini chocolate chip in the center for a "pupil." For an extra spooky bloodshot eyeballs take a toothpick dipped in red food coloring and make squiggly lines on the eye.

Just in time for Halloween, from the makers of Rhodes bread dough

6 - rhodes dinner roll dough, thawed and at room temp.
1 cup(s) pizza sauce
12 slice(s) peperoni
6 - green olives (with pimento)
1 medium egg beaten

Steps:

  • Spray counter lightly with non-stick cooking spray. Flatten each roll with hands, then roll out into a 4-inch circle.
  • Top each roll with 1 pepperoni, a spoonful of pizza sauce, 3-4 cubes of mozzarella cheese, and 1 more pepperoni.
  • Fold sides of the roll up over the other ingredients and pinch together securely.
  • Place on a sprayed baking sheet seam side down. Brush each eyeball with beaten egg.
  • Bake at 350 F 15-20 minutes, or until lightly browned. While baking, cut green olives in half. Use the side of the olive with the hole and push the pimento out slightly.
  • Remove eyeballs from oven and cool for a few minutes. With a knife, pierce the top of the eyeball slightly and twist the knife to make a small hole. Place the green olive with pimento into the hole. Put half of the pizza sauce into a ketchup bottle or other small squeeze bottle. Use the squeeze bottle to draw bloodshot veins leading from the center olive to the outside of the eye.
  • Serve with more pizza sauce or cheese sauce for dipping.

I found this in a supermarket leaflet. I haven't tried them myself but thought they looked fun for all those Halloween parties!

5 hard-boiled eggs
110 g cream cheese
10 pimento stuffed olives
red food coloring

Steps:

  • Cut the eggs in half and scoop out the yolks.
  • In a bowl mash the yolks with the cream cheese.
  • Fill the eggs with the cream cheese mixture and push an olive into the middle of each one.
  • Dip a wooden toothpick into the foodcolouring and draw bloodshot veins onto the cheese mixture, running from the olive to the outside.

2 small packets yellow Jell-O gelatin
1 1/4 cups boiling water
24 blueberries

Steps:

  • Pour boiling water over the gelatin and stir to dissolve completely. Pour the mixture into ice cube trays with rounded bottoms (you should be able to fill 2 trays). Refrigerate until partially set, about 20 minutes. Push the blueberry eyeballs into the partially set gelatin and refrigerate until thoroughly set. Dip the ice cube tray in warm water for 15 to 30 seconds and run a knife around the edges of each ice cube. Turn the "eyes" out on a serving plate and refrigerate until serving time.

1 (3 ounce) package lemon Jell-O gelatin
1 (3 ounce) package lime Jell-O gelatin
2 cups boiling water
1 1/2 cups cold water
blueberries

Steps:

  • You will be molding the 'eyeballs' in ice cube trays, using the method of making a jello mold, and also the method for adding fruit.
  • Pour the jello powder into a bowl, and mix with the boiling water until it dissolves, and then add the cold water.
  • Pour into ice cube trays, and let set in refrigerator for 1 hour until it slightly thickens, remove from fridge, and press a blueberry into each one, and place back in fridge until firm.
  • I placed them in an old glass apothecary jar, and they looked very cool.
