32 ounces Imagine® Organic Chicken Broth
2/3 cup Great Value Ranch Dressing
2 cup shredded Rotisserie Chicken
2 14.5 ounce cans Great Value Diced Tomatoes with Green Chiles
1 package Great Value Mild Taco Seasoning
1 14 ounce package frozen corn mix (Southwestern blend)
Optional topping: crunchy tortilla strips

Steps:

  • Add all of the ingredients into a pot and place over medium-high heat and allow to come to a slow boil.
  • Reduce heat to low. Cover partially with a lid and cook for 20 minutes.
  • For the last 5 minutes of cooking time remove the lid and allow it to continue to simmer. Remove from heat and let it sit off the heat for 5 minutes before serving. This will allow it to thicken up and cool off a bit.

1 1/2 pounds bone-in, skin-on chicken legs and thighs
5 cups chicken stock
2 tablespoons olive oil
4 cloves garlic
1 dried guajillo chile, seeded
Kosher salt and freshly ground black pepper
3 plum tomatoes, cored and halved lengthwise
1 small Spanish onion, diced
Crispy corn tortilla strips, for garnish
1/2 cup guacamole, store-bought or homemade
1/2 cup fresh cilantro, minced
1/2 cup sour cream

Steps:

  • Preheat the broiler.
  • Combine the chicken legs and thighs, chicken stock, olive oil, garlic and chile in a pot over high heat. Season lightly with salt and bring just to a boil. Reduce to a simmer and cook until the chicken is cooked though, about 30 minutes.
  • Meanwhile, put the tomatoes cut-side up on a baking sheet. Broil until tender and very caramelized, about 8 minutes.
  • Remove the chicken from the soup and let cool slightly. Discard the skin and shred the meat.
  • Add the tomatoes to the soup and simmer for 4 minutes, then blend the solids into the stock with an immersion blender. Add the shredded chicken back into the soup along with the onions. Simmer for another 4 minutes. Season with salt and pepper.
  • Spoon the soup into bowls and garnish with tortilla strips, guacamole, cilantro and sour cream.

Although the authentic version of this comforting Mexican soup is traditionally made with chicken stock, I love the garlic broth adaptation. Instead of frying the tortilla strips, I crisp them in the microwave. It's a great nonfat way to make chips.

1 tablespoon extra virgin olive oil
1/2 medium onion, finely chopped
1 teaspoon mild chili powder
2 plump garlic cloves, minced
1 (14-ounce) can chopped tomatoes, drained
Salt to taste
1 1/2 quarts garlic broth
8 corn tortillas, cut in strips
3 tablespoons chopped cilantro
Pinch of cayenne (optional)
2 tablespoons freshly squeezed lime juice
1/4 cup grated Gruyère or crumbled queso fresco
Lime wedges for garnish

Steps:

  • Heat 1 tablespoon of the oil in a heavy soup pot over medium heat and add the onion. Cook, stirring often, until tender, about 5 minutes. Add 1/2 teaspoon salt and the chili powder and stir together for a minute, then add the garlic and continue to cook, stirring, for another minute, until fragrant. If the pan seems dry and the ingredients look like they may scorch, add the remaining oil. Add the tomatoes and cook, stirring often, until the tomatoes have cooked down and smell fragrant, about 10 minutes. Add salt to taste.   • Using an immersion blender, blend the soup until smooth. Bring back to a simmer and stir in the cilantro. Simmer for 1 minute. Taste the broth and adjust salt. Add cayenne if you want more heat. Stir in the lime juice.
  • Distribute the toasted tortilla strips among soup bowls and top with the grated or crumbled cheese. Ladle in the soup. Garnish with cilantro and serve.

1 cup water
Oil for deep-fat frying
6 corn tortillas (6 inches), halved and cut into 1/4-inch strips
1 small onion, sliced
4 garlic cloves, peeled
1 can (14-1/2 ounces) whole tomatoes, drained
6 cups vegetable or chicken broth
1/4 cup chopped fresh cilantro
1/2 teaspoon salt
1/8 teaspoon cayenne pepper, optional
1-1/2 cups shredded Monterey Jack cheese
1 large avocado, peeled and diced
1 medium lime, sliced and quartered

Steps:

  • In a small bowl, combine the ancho pepper and water; let stand for 20 minutes or until pepper is softened. Drain and discard water; set pepper aside., In a large saucepan, heat 1 in. of oil to 350°. Add half of the tortilla strips; cook and stir until golden brown. Remove with a slotted spoon to paper towels to drain. Repeat with remaining tortilla strips; set aside., Drain saucepan, reserving 2 teaspoons of oil. In reserved oil, cook the onion, garlic and ancho pepper over low heat until onion is golden brown, about 7 minutes. Remove from the heat; cool slightly. Transfer to a food processor; add tomatoes. Cover and process until smooth., Return mixture to the pan. Cook, uncovered, over medium heat until mixture has thickened to the consistency of tomato paste, 10 minutes. Add broth; bring to a boil. Reduce heat; cover and simmer for 30 minutes., Add the cilantro, salt and, if desired, cayenne. Divide cheese and avocado among six bowls; top with the soup, tortilla strips and quartered lime slices.

1 tablespoon enchilada sauce mix (recommended: Lawry's)
1 avocado, pit removed, flesh chopped
1 cup shredded Mexican-cheese blend
3/4 cup crushed baked blue corn chips (recommended: Guiltless Gourmet)
