SUPER SHOOTER SPRITZ HOLIDAY COOKIES
This recipe is reported to work well in the Proctor-Silex Super Shooter or Super Shooter Plus cookie presses. It may be refrigerated to make dough stiffer if necessary for other cookie presses. I lost my recipe book that came with the Super Shooter and found other spritz cookie recipes to be too stiff or too sticky to work in my machine. I found this recipe through a google search at www.familyeducation.com/whatworks.

SPRITZ COOKIES - SWEDISH BUTTER COOKIES RECIPE - (4.3/5)
Provided by Foodiewife
Number Of Ingredients 8
Steps:
- Adjust oven rack to middle position; heat oven to 375°F. In small bowl, beat yolk, cream, and vanilla with fork until combined; set aside. In standing mixer, cream butter, sugar, and salt at medium-high speed until light and fluffy, 3 to 4 minutes. Scrape down bowl with rubber spatula. With mixer running at medium speed, add yolk/cream mixture and beat until incorporated, about 30 seconds. Scrape down bowl. With mixer running at low speed, gradually beat in flour until combined. Scrape down bowl and give final stir with rubber spatula to ensure that no flour pockets remain. If using cookie press to form cookies, follow manufacturer's instructions to fill press; if using pastry bag, press or pipe cookies onto un-greased baking sheets, spacing them about 1 1/2 inches apart. Bake one sheet at a time until cookies are light golden brown, 10 to 12 minutes, rotating baking sheet halfway through baking time. Cool cookies on baking sheet until just warm, 10 to 15 minutes; using metal spatula, transfer to wire rack and cool to room temperature. My tips for best success: Use room temperature butter and egg yolk. Make sure that your baking sheets are clean, and free of grease (or the cookies could stick). Do NOT put the cookies on parchment paper and don't grease the baking sheet! If you are using a cookie press, roll the dough into a "log". It will easily slip into the cylinder. Press the dough into the cylinder, trying to get out the air bubbles. Some of the cookies will come out deformed. Just scoop the dough off the baking sheet, and add back with the rest of the unbaked dough. Allow the cookies to cool for a few minutes, and loosen them with a spatula. Once completely cool, move to a baking rack.
Tips:
- Choose the right cookie press: There are many different types of cookie presses available, so it's important to choose one that is the right size and shape for your needs. If you're new to cookie pressing, a basic hand-held press is a good option. For more experienced bakers, a benchtop or electric press may be a better choice.
- Use chilled dough: Chilling the dough before pressing will help it hold its shape and prevent it from sticking to the press. You can chill the dough for at least 30 minutes, or up to overnight.
- Coat the press with flour: Before using the press, coat it with flour to prevent the dough from sticking. You can also use cooking spray, but flour is generally more effective.
- Press the dough evenly: When pressing the dough, be sure to apply even pressure to the handle. This will help ensure that the cookies are all the same size and shape.
- Bake the cookies according to the recipe: The baking time for spritz cookies will vary depending on the recipe. Be sure to follow the recipe instructions carefully to ensure that the cookies are baked properly.
Conclusion:
Spritz cookies are a delicious and festive treat that can be enjoyed by people of all ages. With a little planning and effort, you can easily make your own spritz cookies at home. Just be sure to choose the right cookie press, chill the dough, coat the press with flour, and press the dough evenly. With a little practice, you'll be able to create beautiful and delicious spritz cookies that will impress your family and friends.
