Time 40m

Number Of Ingredients 10

3/4 pound fingerling potatoes, halved lengthwise
1 medium yellow onion, diced medium
2 carrots, cut into 1/2-inch rounds
1 large beet, scrubbed, peeled, and cut into 1/2-inch wedges
1 large sprig rosemary
3 tablespoons olive oil, divided
Salt and pepper
4 large eggs
1 head red leaf lettuce, trimmed and leaves torn into bite-size pieces
1 tablespoon lemon juice plus wedges for serving

Tips:

  • Select Fresh Vegetables: Choose fresh, crisp vegetables for the best flavor and texture in your salad. Look for vibrant colors and avoid wilted or bruised produce.
  • Steam Vegetables to Perfection: Steaming preserves the nutrients and natural flavors of vegetables better than boiling. Steam them until tender but still slightly crunchy. Overcooking can make them mushy.
  • Use High-Quality Potatoes: Choose firm, waxy potatoes like Yukon Gold or Red Bliss for the salad. These hold their shape well when cooked and provide a creamy texture.
  • Cook Potatoes Properly: Boil the potatoes until tender but not falling apart. Drain them well to prevent excess water from diluting the salad dressing.
  • Hard-Boil Eggs Perfectly: For easy peeling and a creamy yolk, place the eggs in a single layer in a saucepan and cover them with cold water. Bring the water to a boil, then remove the pan from the heat and cover. Let the eggs stand in the hot water for 10-12 minutes, depending on how hard you want them to be.
  • Use Homemade Dressing: A simple vinaigrette made with olive oil, vinegar, salt, and pepper is a classic choice for this salad. You can also use a creamy dressing made with mayonnaise, sour cream, or yogurt.
  • Chill Before Serving: For the best flavor, chill the salad for at least 30 minutes before serving. This allows the flavors to meld and the vegetables to absorb the dressing.

Conclusion:

This steamed vegetable, potato, and egg salad is a delicious, healthy, and versatile dish that can be enjoyed as a main course or a side dish. With its vibrant colors, delightful textures, and satisfying flavors, it's sure to be a hit at your next gathering. So gather your ingredients, follow these tips, and create a culinary masterpiece that will tantalize your taste buds and nourish your body!
