3 tablespoons extra-virgin olive oil
1 large onion, chopped
2 large garlic cloves, minced
1 pound fresh green beans, trimmed
3/4 pound yellow squash (3 medium squash), sliced
1 (14-ounce) can chopped tomatoes, or 1 1/2 cups peeled, chopped tomatoes
Salt and freshly ground pepper to taste
1/4 cup chopped fresh mint, parsley or dill
1 to 2 tablespoons fresh lemon juice (optional)

Steps:

  • Heat 2 tablespoons of the olive oil in a wide, covered skillet or Dutch oven over medium heat, and add the onion. Cook, stirring, until tender and translucent, five to eight minutes. Add the garlic and cook, stirring, for another minute until fragrant. Stir in the green beans, squash and remaining oil. Stir together for a few minutes, then add the tomatoes and 1/2 cup water. Bring to a simmer, then add salt and freshly ground pepper.
  • Cover and simmer 30 minutes until the beans are tender and the mixture is stew-like. Add the herbs, and simmer for another five to 10 minutes. Add lemon juice if desired. Taste, and adjust seasonings with salt and pepper. Serve hot or at room temperature.

2 pounds russet (baking) potatoes, peeled and cut into 1-inch pieces

1 onion, 1 half finely chopped (1/2 cup)

1 can (28 ounces) whole plum tomatoes, with juice
2 tablespoons extra-virgin olive oil, plus more for drizzling

Steps:

  • Soak beans in water overnight. Drain, and transfer to a large pot. Cover beans with 4 inches water. Add the intact half of the onion, the carrot, celery, and bay leaf. Bring to a boil. Reduce heat, and simmer until beans are tender but not bursting, about 1 hour. Drain, and remove onion, carrot, celery, and bay leaf; discard.
  • Pulse tomatoes, with juice, in a food processor until coarsely chopped. Heat oil in a medium heavy-bottomed pot over medium heat. Add chopped onion, the garlic, and red-pepper flakes. Cook, stirring occasionally, until onion and garlic are tender but not browned, about 3 minutes. Add tomatoes and rosemary. Bring to a boil.
  • Add beans, and simmer, stirring occasionally, until tomato sauce thickens, about 20 minutes. Season with salt and pepper. Serve warm, and drizzle with oil just before serving.

2 tablespoons extra virgin olive oil
1 large onion, chopped
2 large potatoes, peeled and cut into 3/4 inch chunks
1/2 cup water
2 medium zucchini, sliced lengthwise & into 1/2 inch chunks
1 lb green beans, thawed if frozen,fresh is better
1 3/4 lbs fresh tomatoes
1/2 teaspoon dried oregano
1 bunch chopped fresh dill or 1 bunch fresh parsley
salt & freshly ground black pepper
1/2 lb feta cheese

Steps:

  • Heat the oil in a large soup pot or steep-sided stir-fry pan.
  • Add the onion and sauté until it is golden.
  • Add the potatoes and water.
  • Bring to a simmer, then cook, covered, over medium heat until the potato chunks are about half-done, about 15 minutes.
  • Add the zucchini, green beans, tomatoes, and oregano.
  • Simmer over low heat for about 20 minutes, or until the vegetables are just tender.
  • Stir in the dill combination, Cut the feta cheese into chunks and put into the stew.

6 -10 pitted green olives (optional)

  • Add olive oil and add sofrito heat through for 1 minute.
  • Add olives, beans, Sazon packet, tomato sauce and cook for 1 minute.

Chicken:
1 whole chicken - cut into serving pieces
1 tsp salt
1/2 tsp white pepper
2 balls recado (you can buy it here or search for red recado recipes - can substitute small amounts of cayenne and paprika)
1 sliced onion
3 T vegetable oil
1 T white vinegar
1 C water
2 tsp brown sugar (use raw cane sugar)
1 C water
1 T Worcestershire sauce
Rice and Beans:
1 C red kidney beans - dry
1 C thick coconut cream (milk)
1 onion - sliced
1 clove garlic
2 C white rice
Pepper and salt to taste

Steps:

  • CHICKEN: To season with recado, get the palms of your hands wet with a bit of oil or chicken fat, then place a ball of recado in your palms and rub it around until it forms a paste which you then wipe on the chicken. You do not need a lot of recado. A thin rub will do the job. Cut chicken in serving pieces and place on a cookie sheet and season with salt, white pepper, recado and sliced onion. Brown chicken in hot oil until well browned. Pour off excess fat. Cook over low heat, adding vinegar and water. In a small frying pan, brown the cane sugar. Add 1 cup water and Worcestershire sauce while deglazing the bottom of a pan with a wooden spoon (stir the bits of sugar off the off the bottom). Add sugar and Worcester sauce mixture to the stew and cook until chicken is done. RICE AND BEANS: Soak beans overnight in enough water to cover. Boil beans covered until tender and whole, about 1 and a half hours, adding 1/2 onion and garlic when almost tender. Add coconut cream and the rest of the onion along with the salt and pepper. Wash the rice and add to beans. Cook over gentle heat until liquid is absorbed, about 20 minutes. Stir gently with fork and add a little water from time to time until rice is cooked. If the bottom scorches, carefully finish cooking without stirring up the bottom, adding water from time to time if needed. In Belize they call the burnt bottom "Rice Bun" and it is good to eat. Just do not stir it through the rice. You can thicken the gravy with 3 tsp corn starch in about 1/2 cup of cold water then simmer for 5 to 10 minutes till it thickens. To Serve: Pour chicken and sauce over rice and beans. Serve with potato salad and fried plantains.

This side dish comes under the heading of "old-style comfort food"! Delicious with roast meats and stews. As with such old, trad recipes, quantities are not set in stone.

14 ounces green beans
1 potato, medium, peeled and sliced
1 onion, medium, peeled and sliced
1/2 teaspoon sugar
1/3 teaspoon white pepper (to taste)
1/2 teaspoon salt (to taste)
1/3 teaspoon nutmeg, as garnish, to taste (optional)
butter, to taste

Steps:

  • Wash and tail beans. Please note that you could use more; the quantity doesn't matter. If you're cooking for more than 4 people, use more beans and maybe 2 potatoes.
  • Cut the beans cross-wise into rounds -- anything from thinly sliced to 1" long.
  • Carry on until all the beans have been cut.
  • Put in a pot, and slice the peeled potato and onion over the beans.
  • Add about 1/3 cup water, sugar, white pepper and salt.(Yes, white pepper is the best here, but black pepper is fine). Don't mix: just put lid on and bring to boil, then lower heat and let simmer.
  • Bring to the boil, lower heat, put lid on, and let the whole lot simmer until everything is very soft.
  • Using one of those utensils (name?)which you use to mash any vegetable roughly, mash the beans, potato and onion, but don't try to beat it to a pulp -- there should be texture left (see photo's!).
  • Usually there is a bit too much liquid left. Drain this off -- I use a sieve -- or you can boil it away over high heat, but be careful not to burn the veggies.
  • Add a good knob of real butter, fork through, and sprinkle with nutmeg to serve.
  • This simple dish can easily be made ahead and warmed up -- the flavour improves.
  • Serve as a vegetable side dish.

Albanian Stewed Green Beans and Potatoes With Smokey Seitan image

This Stewed Green Bean recipe is a great flavorful way to use green beans! The recipe makes enough for two hungry people, so if you have more people at home double the recipe. The recipe uses three tablespoons of olive oil so if you want to make this lower fat feel free to reduce some of the oil. You can replace the seitan with storebought "beef" or "chicken" chunks, or even veggie crumbles. Taken directly from the Vegan Foodie.

1 1/2 cups seitan, cut into bite size pieces (can use beef or chicken style chunks from Morningstar or other brand)
2 cups green beans, trimmed and cut in half
1 small red potatoes, cut into bite size pieces
1 medium onion, sliced thinly
3 -4 garlic cloves
1 medium tomatoes, diced (or one half of a large tomato)
1 teaspoon paprika
1/2 teaspoon oregano
1 pinch chili flakes (optional)
2 cups vegetable broth (or water, you may need to add more liquid)
3 tablespoons olive oil plus 1 tablespoon olive oil
1 1/2-2 teaspoons liquid smoke (may need to use more to get the right flavor, so adjust to your taste)
smoked salt, to taste (Optional, if you donà t have smoked salt use regular salt)

Steps:

  • Heat a medium pot over medium heat with 1 tablespoon of olive oil. When hot enough, add the seitan and saute until golden on all sides about 4-5 minutes. Towards the end at the liquid smoke and Smoked Salt. Remove from pot and set aside.
  • Now add about 2-3 tablespoons of Olive Oil to the pot. Add the onions and saute for a good 8 minutes until they are translucent and tender. If your pot has burned pieces from the seitan, deglaze it with a bit of vegetable broth. Add the garlic and saute for a minute until fragrant. Now it's time to add the green beans and potatoes. Saute the green beans and potatoes for about 5 minutes.
  • Now add the tomato, paprika, oregano, chili flakes and season with salt and pepper. Saute for another two minutes. Add the vegetable broth or water and bring to a boil and then to a simmer. After a couple of minutes add the seitan that you have set aside. Simmer the stew for about 45-50 minutes until the green beans and potatoes are tender. If the stew starts to get dry simply add some more broth. Re-season with salt and pepper to taste if necessary. Remember to not go heavy on the salt because the Smokey Seitan is salt already from the smoked salt. Let the stew sit for 15 minutes or you can eat it has soon has it finished cooking.
  • I like to serve these stewed green beans with some rice, bread, and a side salad or vegetable.

1 tablespoon olive oil
1 cup red bell pepper, chopped
1 cup yellow bell pepper, chopped (or orange)
1 tablespoon bottled garlic, minced
1/8 teaspoon crushed red pepper flakes
1/2 cup water
1/4 teaspoon rubbed sage
2 (15 ounce) cans cannellini beans, rinsed and drained
1 (14 1/2 ounce) can tomatoes, diced and undrained
1/4 teaspoon black pepper, coarsely ground

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add bell peppers, and cook 5 minutes or until tender, stirring frequently. Add garlic and crushed red pepper; cook 1 minute, stirring constantly. Stir in water, sage, beans, and tomatoes; bring to a boil. Reduce heat; simmer 10 minutes or until thick, stirring occasionally. Sprinkle with black pepper.
