This is such a wonderful and easy recipe, especially if you are Stilton cheese and potato fans, as we are! Just slice up pre-cooked potatoes, add a slice of Stilton, season and bake in a pastry case, and there you have it......a great snack, lunch or picnic food extraordinaire! Serve them with assorted chutneys, pickles, salads or even MORE potatoes for a very tasty meal. I have stipulated ready-made shortcrust pastry, but puff pastry would also work well. Ingredients are listed for 4 people - however, this recipe is easy to multiply or reduce, according to your potato and Stilton supplies!!

230 g ready-made rolled shortcrust pastry
3 -4 boiled potatoes, sliced into 1-inch rounds
4 slices Stilton cheese
salt
fresh ground black pepper
1 egg, beaten with a little
milk

Steps:

  • Pre-heat the oven to 200C/400F/Gas 6.
  • Grease and line a sturdy oven proof biscuit (cookie) sheet.
  • Cut out 8 pastry circles - about 3" to 4" in diameter - a cup is a great template!
  • Place the sliced potatoes on 4 of the pastry circles - leaving a 1/2" border.
  • Season well with black pepper, and salt if you wish - remembering that Stilton is quite salty itself.
  • Place a slice of Stilton cheese on top of the potatoes.
  • Place the remaining 4 circles of pastry over the top - bringing up the bottom pastry circle and pinching them together to make a crust - the bottom pastry circle should sit over the top of the top pastry circle as a seal.
  • Press the crust with the back of a fork to make a pattern and seal the pastry circles together.
  • Cut two 1" slits in the top of each pie - to let the steam escape.
  • Glaze the tops with the beaten egg and milk mixture.
  • Place onto the lined and greased oven tray and bake for about 15-20 minutes, or until the pastry is golden brown and crisp.
  • Allow to cool slightly before eating, as the cheese will be very hot!

I found the basic potato pie recipe in a cookbook and added the sweet onions, for which our area is famous. I've used this recipe for brunches and as a side dish for a main meal.

8 cups frozen shredded hash brown potatoes, thawed
6 tablespoons butter, divided
3/4 teaspoon salt, divided
1 cup diced sweet onion
1/4 cup chopped sweet red pepper
1 cup shredded cheddar cheese
3 large eggs, lightly beaten
1/3 cup whole milk

Steps:

  • Gently squeeze potatoes to remove excess water. Melt 5 tablespoons butter; add to potatoes along with 1/2 teaspoon salt. Press in bottom and up sides of a greased 9-in. pie plate to form a crust. Bake at 425° for 25-30 minutes or until edges are browned. Cool to room temperature. , In a saucepan over medium heat, saute the onion and red pepper in remaining butter until tender, about 6-8 minutes. Spoon into crust; sprinkle with cheese. 2 1/2 lbs russet potatoes, peeled and thinly sliced (about 5 medium)
8 ounces Stilton cheese or 8 ounces other blue cheese, crumbled
1 1/3 cups low sodium chicken broth
2 tablespoons butter, cut into small pieces

Steps:

  • Preheat oven to 350 degrees.
  • Butter (or spray with Pam) a 13X9X2 inch baking dish.
  • Arrange 1/3 of potato slices in bottom of pan, overlapping slightly.
  • Sprinkle half of cheese over potatoes.
  • Sprinkle with salt and pepper and arrange half of remaining potatoes over cheese.
  • Sprinkle with the rest of the cheese and arrange the remaining potatoes over the cheese.
  • Pour broth over, sprinkle with salt and pepper and dot the top with butter.

1.5kg Maris Pipers
1 1/2 Extra large onions, halved and sliced
Oil
Butter
Milk
Black pepper
225g Stilton
25g fine grated parmesan (really fine ready bought stuff gives a good crust)

Steps:

  • 1. Peel and boil potatoes until tender 2. Put some oil and a big blob of butter in a pan and slowly cook onions until thoroughly soft and sticky, this will take about the same time as the potatoes 3. Drain the potatoes and mash the potato with some milk 4. Butter a dish (Nigel and I both used a 28cm metal handled frying pan) 5. Spoon in half the potato, level out and add the onions and a dash of pepper. Crumble the stilton over the onions and then cover with the remaining half of mash and smooth out. 6. Sprinkle the parmesan over evenly, and garnish with some slices of tomato. 7. Cook at 200C/400F/GM 6 until the top is golden (20-30 minutes). 8. Serve on blanched whole savoy cabbage leaves.
