STIR-FRIED BEEF CURRY

Easy and delicious. Curry is not traditionally a Chinese spice, but it adds a hint of exotic, subtle flavor to this dish. This can be a filling dinner for 2 on it's own or can be served as part of a multi-course Chinese-style dinner. It matches well with vegetables, especially string beans or broccoli.

PAD PED NUEA - STIR FRIED CURRY BEEF WITH LONG BEANS

Pad Ped Nuea - Stir Fried Curry Beef With Long Beans image

This recipe is from Thailand: The Beautiful Cookbook, by far my favorite Thai cookbook. It is a ground beef curry, which seems fairly unique. I use frozen cut green beans and frozen mixed peppers, so it is quick and easy to make with staple ingredients. I doubled it as it only calls for 8 oz of ground beef.

1/2 cup green bell pepper, sliced

Tips:

  • Choose the right cut of beef: For stir-fried beef curry, flank steak, sirloin steak, or tenderloin steak are good choices. These cuts are tender and flavorful, and they cook quickly.
  • Slice the beef thinly: This will help it cook evenly and quickly.
  • Marinate the beef: Marinating the beef in a mixture of soy sauce, rice wine, and ginger will help to tenderize it and add flavor.
  • Use a powerful wok: If you have a large gas cooker, use a wok to make the dish. This will help to create the high heat you need to stir-fry the beef and vegetables.
  • Cook the beef and vegetables in batches: Do not overcrowd the wok or pan. Otherwise, the beef and vegetables will not cook evenly.
  • Use a high heat: Stir-frying is a quick-cooking method. Use a high heat to cook the beef and vegetables so that they retain their color and texture.
  • Add the curry paste: Once the beef and vegetables are cooked, add the curry paste and stir to coat. Cook for a few minutes to allow the flavors to meld together.
  • Add coconut milk and broth: Add coconut milk and broth to the wok or pan. Bring to a simmer and cook for a few minutes, or until the sauce has thickened.
  • Serve with rice: Stir-fried beef curry is traditionally served with rice.

Stir-fried beef curry is a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal.
