2 medium stalk broccoli, cut in small bite-size pieces
4 garlic cloves, chopped
2 -3 sliced shallots (optional) or 1/2 cup sliced onion (optional)
2 tablespoons peanut oil, for stir-frying
2 -3 tablespoons thai oyster sauce (nahm man hoi)
2 -3 teaspoons fish sauce, to taste (nahm bplah)
generous sprinkling white pepper

Steps:

  • Heat a wok over high heat until it begins to smoke. Swirl in the oil to coat its surface evenly. Let the oil heat for 15-20 seconds.
  • Add chopped garlic, followed 10 seconds later with the sliced shallots or onion (if using). Saute 15-20 seconds to flavor the oil.
  • Add broccoli. Toss with the oil for about a minute before sprinkling with oyster sauce to lightly coat the pieces. Stir-fry another minute.
  • Season with fish sauce.

1 teaspoon low sodium soy sauce

2 tablespoons vegetable oil
2 cloves garlic, chopped

3/4 lb flank steak
1 tablespoon soy sauce
1 tablespoon rice wine
2 tablespoons water
1 tablespoon cornstarch
1/8 cup vegetable oil
3 cloves garlic, minced

6 green onions, chopped
1/3 cup water
1 lb broccoli, cut into florets
2 tablespoons oyster sauce

Steps:

  • Cut meat across the grain into very thin slices.
  • Place in a bowl and combine with soy sauce, rice wine, water and cornstarch.

1 lb flank steak, sliced against the grain
3 tablespoons soy sauce
1 tablespoon dry sherry
2 tablespoons low sodium chicken broth
5 tablespoons oyster sauce
1 tablespoon light brown sugar
1 teaspoon sesame oil
1 teaspoon cornstarch
6 medium garlic cloves, minced
1 inch piece ginger, minced (about 1 Tbsp.)
3 tablespoons peanut oil or 3 tablespoons vegetable oil
1 1/4 lbs broccoli, bite-sized florets and stems trimmed into 1/8 inch slices
1/3 cup water
1 small red bell pepper, cored, seeded, and diced
3 medium scallions, sliced 1/2 inch thick on diagonal

Steps:

  • Combine the beef and soy sauce in a medium bowl; cover with plastic wrap and refrigerate at least 10 minutes or up to 1 hour, stirring once. Meanwhile, whisk the sherry, chicken broth, oyster sauce, sugar, sesame oil, and cornstarch in a measuring cup. Combine the garlic, ginger and 1 1/2 teaspoons peanut oil in small bowl.

800 g boneless skinless chicken breasts, cut into 1 . 5 cm pieces
1 teaspoon peanut oil
1 tablespoon peanut oil
1 head broccoli, cut into small florets (approx. 2 cups)
150 g sliced mushrooms (approx. 1 cup)
1 large carrot, julienned (approx. 1 cup)
