1 lb large shrimp, peeled & deveined (21-25 per pound)
1 egg white
1/4 cup cornstarch
1 -2 tablespoon water
2 cups vegetable oil
1 tablespoon vegetable oil
1/4 cup chicken broth
1/4 cup apple cider vinegar
1/4 cup ketchup
3 tablespoons soy sauce
2 tablespoons dry sherry
8 garlic cloves, crushed and minced
2 tablespoons minced fresh ginger
5 tablespoons sugar
1 teaspoon chili paste (or to taste)
1/2 cup sliced fresh water chestnut
1 tablespoon cornstarch
3 tablespoons cold water
