STOCK-AND-CIDER-BRINED CHICKEN OVER STUFFING

Stock-and-Cider-Brined Chicken Over Stuffing image

This one-pan dinner is ugly - rustic, if we're being kind - but good. Or as the Italians say, "brutta ma buona." Truly, though, it's everything you could ask for in a rich, comforting meal. As it cooks, the chicken, brined in stock and cider, drips its flavorful juices onto the bread. The bread absorbs every drop, turning into a chewy, savory nest cradling the tender, perfectly browned chicken. Each bit of stuffing offers a different surprise - sometimes the sweet-and-sour zing of a prune, other times the faint rumor of Thanksgiving whispered by celery and thyme. It's as satisfying as you could ever hope, even if it isn't particularly attractive.

Time 9h30m

Yield 6 servings

Number Of Ingredients 16

6 tablespoons unsalted butter, divided
1 medium yellow onion, diced into 1/2-inch pieces
3 celery ribs, diced into 1/2-inch pieces
2 medium carrots, peeled and sliced into 1/2-inch pieces
1 tablespoon plus 1 teaspoon fine sea salt, divided
1/2 teaspoon freshly ground black pepper
1 1-pound loaf crusty country bread
1 1/2 cups sodium-free chicken stock, preferably homemade or purchased from a butcher
1 1/2 cups apple cider
1 cup quartered pitted prunes
2 tablespoons apple-cider vinegar
2 1/2 pounds (6 to 8 large) bone-in, skin-on chicken thighs
2 tablespoons finely chopped sage
2 tablespoons finely chopped parsley
1 tablespoon finely chopped thyme
Optional: 1 1/2 cups cooked, chopped leafy greens like kale, chard or broccoli rabe

Steps:

  • Make the brine: Melt 3 tablespoons of the butter in a 10-inch cast-iron skillet or similar pan over medium-low heat. Add onion, celery and carrots, 1/2 teaspoon of the salt and the pepper. Cook, stirring occasionally, until the vegetables are all tender, about 20 minutes. Transfer to a plate, and cool to room temperature in freezer.
  • While the vegetables cool, cut the bread into 3/4-inch cubes and spread into a single layer on a baking sheet. Allow to dry out overnight.
  • Combine the stock and cider in a large measuring cup and pour 1 1/2 cups of the mixture into a plastic gallon-size zipper bag. Add vegetables, remaining salt, prunes, vinegar and chicken thighs. Seal bag, and massage everything around to dissolve salt and combine. Refrigerate 8 hours or overnight. Cover and refrigerate remaining stock-cider mixture.
  • To cook the chicken: Allow chicken to come to room temperature. Heat oven to 400. Scraping off brine and vegetables, remove chicken from bag, and set aside. Place brine with vegetables and remaining stock-cider mixture in a 10-inch cast-iron skillet or similar pan, and bring to a boil.
  • In a large bowl, combine cubed bread, vegetables and liquid, sage, parsley, thyme and greens, if using. Return pan to low heat, and add remaining 3 tablespoons butter to melt. Pack stuffing mixture into pan, and lay chicken thighs on top. Place pan onto a rimmed baking sheet to catch any overflow, and bake on lower rack for 50 to 55 minutes until chicken and stuffing are golden brown.
  • Allow to cool for 10 minutes before serving.

CELERY HERB STUFFING AND SAVORY CHICKEN

Celery Herb Stuffing and Savory Chicken image

I taught my children this recipe by singing along to Scarborough Fair by Simon and Garfunkel: Parsley, Sage, Rosemary and Thyme, great herb stuffing seasonings. If you can get savory from the Atlantic provinces to green your chicken; it would be the best. My father was a Newfoundlander and swore by their savory.

STUFFED CHICKEN BREASTS WITH APPLE CIDER VINEGAR SAUCE

Stuffed Chicken Breasts With Apple Cider Vinegar Sauce image

This is a much altered version of a recipe I found online a few years ago. I simplified it and it actually tastes better than the more difficult version. My family loves this recipe. My husband literally drinks the sauce. These are great for 4 or for 24. Very easy to scale up for large dinner parties.

Time 1h25m

Yield 4 serving(s)

Number Of Ingredients 12

4 boneless skinless chicken breasts
1 tablespoon butter
2 garlic cloves, minced
2 tablespoons sugar
2 tablespoons cider vinegar
2 cups beef stock
7 dried apricots
1/4 cup dried cranberries
1/2 large seeded tomatoes, chopped
1/2 cup crumbled feta cheese
portion of small bag of fresh Baby Spinach
salt and pepper

Steps:

  • Heat the oven to 425 degrees.
  • For stuffing boil enough water to soak apricots and cranberries. Let soak for 15 minutes. Let apricots cool slightly and cut into small pieces and add to bowl with tomatoes and feta cheese. Season to taste with salt and pepper.
  • Using sharp knife, cut horizontal slit 3/4 way through each chicken breast. Open like a book and place on a cooking sheet. I use a cooking stone sheet with great results. Place a couple of layers of spinach on each inside side of chicken breast. No need to steam first. Place as much of the stuffing mix as you can on one side and close the breast over. I don't use string, but you can if you find it easier. I stuff as much as I can, almost to the point of overstuffing.
  • Lightly brush olive oil over breasts. Cover with foil for the first 10 mins of baking and then remove foil for last 30 mins or so. Actual time depends on breast size. I remove from oven when internal temp is 175 degrees. Cover with foil while you complete the sauce. I usually let sit covered for 10 mins or so.
  • For sauce melt 1 tbsp butter in sauce pan on medium heat. Add garlic and brown. Add the cider vinegar and boil 2 minutes. Add the sugar and beef stock and reduce temperature slightly and continue to boil until sauce is reduced to desired thickness and taste. About 10-15 mins should do it. You can dilute with additional stock if you boil down too much. Season to taste with salt and pepper. You can play around with sugar and vinegar amounts to get the flavor that is right for you.
  • You can serve breast as is or sliced. I prefer whole as I find that it tends to fall apart. Pour sauce over and serve.

Tips:

  • Choose a high-quality chicken: Look for a chicken that is plump and has a moist, even color. Avoid any chicken that has a slimy or bruised appearance.
  • Brine the chicken overnight: This will help to keep the chicken moist and flavorful. To make the brine, simply dissolve 1 cup of salt and 1/2 cup of sugar in 1 gallon of water. Submerge the chicken in the brine and refrigerate for at least 8 hours, or up to 24 hours.
  • Use a good quality stuffing: The stuffing is an important part of this dish, so make sure to use a recipe that you enjoy. There are many different stuffing recipes to choose from, so you can find one that fits your taste.
  • Cook the chicken until it is cooked through: The best way to check if the chicken is cooked through is to insert a meat thermometer into the thickest part of the thigh. The chicken is cooked through when the internal temperature reaches 165 degrees Fahrenheit.
  • Let the chicken rest before carving: This will help to keep the juices in the chicken and prevent it from drying out.

Conclusion:

Stock and cider brined chicken over stuffing is a delicious and easy-to-make dish that is perfect for a special occasion. The chicken is moist and flavorful, and the stuffing is savory and hearty. This dish is sure to be a hit with your family and friends.
