BASIC VANILLA CUSTARD

Basic Vanilla Custard image

My mother's recipe--eat on its own or pour over canned peaches or guavas or, my fave, bread pudding. If you are really grossed out by the possibility of flecks of egg white in your custard, you can either pass it through a fine-mesh sieve or substitute four yolks for the two whole eggs.

Time 20m

Yield 3 cups, 4 serving(s)

Number Of Ingredients 5

2 cups milk
2 tablespoons cornstarch
1/3 cup sugar
2 eggs, lightly beaten
1 teaspoon vanilla

Steps:

  • Have eggs ready in a bowl, and set aside where it will be within reach.
  • Using a whisk, combine milk, sugar and cornstarch in a medium saucepan over medium heat on stovetop. Allow milk to scald (heat to the point when tiny bubbles form around edges of pan). Whisk occasionally to prevent cornstarch from clumping on bottom edges of pan.
  • Remove milk mixture from heat, preferably to a burner that's turned off.
  • Mix about 2 tablespoons of scalded milk mixture into eggs using whisk, then introduce eggs into milk mixture in a slow stream, whisking milk mixture constantly.
  • Immediately return pan to heat and whisk gently until custard thickens, another two or three minutes. Do not allow to boil. (If you find that you have egg white strands in custard, feel free to pass it through a fine-mesh sieve into a different bowl now.)
  • Remove pan from heat and stir in vanilla.

OLD TIME EGG CUSTARD

Old Time Egg Custard image

This is a very old recipe for egg custard. If you like cooking vintage recipes for a taste of the old life, this one is for you. You can also convert this recipe to make tarts or a pie. You can add nutmeg and other spices to taste, or you can bake a pie crust and pour custard into that as well.

SIMPLE CUSTARD

Simple Custard image

This is my own alteration of a few different recipes. Not too rich or too sweet as many egg custards can be. Can be served warm immediately or cold.

MY NANNA'S STOVE TOP RICE PUDDING/RICE CUSTARD

My Nanna's Stove Top Rice Pudding/Rice Custard image

My nanna made this for me as a child, I was a very picky eater, but I loved this. My nanna would swap between calling rice custard and rice pudding, so have decided to call it both! I have shared this on a forum and realised that I hadn't posted it. So here it is. I personally like this warm with stewed apples, but my children like it warm with ice-cream. It is also wonderful cold and re-heats well too. Sultana's can be added when cooking. Choose the condensed milk if you prefer a sweeter dessert.

Time 47m

Yield 6-8 serving(s)

Number Of Ingredients 6

1 cup glutenous rice (I like aborio)
2 cups milk, dried milk powder and water work well too (full ceam, low fat, skim you choose)
1 cup heavy cream, unwhipped or 1 cup sweetened condensed milk
1 tablespoon vanilla
1/4-2/3 cup sugar, to your personal taste
1 tablespoon cinnamon, to sprinkle over

Steps:

  • Add all ingredients, exept the cinammon in a heavy based pot.
  • Cook over a low/medium heat for 35-45 minutes, stirring often until you get the texture of rice that your family likes (we like it VERY soft).
  • Do not let this boil.
  • Serve hot, warm or cold.
  • Sprinkle cinnamon over the top. I like to add homemade stewed apples.
  • If you choose to refrigerate this, wait until it has stopped steaming.
  • Careefully press the plastic wrap down and over the rice pudding so that it is touching to stop a skin forming.

Tips:

  • Use fresh ingredients: Fresh eggs, milk, and cream will give your custard the best flavor and texture.
  • Don't overcook the custard: Custard should be cooked until it is just set, not firm. Overcooked custard will be grainy and rubbery.
  • Stir the custard constantly: Stirring the custard constantly will help to prevent it from curdling.
  • Use a double boiler: A double boiler is a great way to cook custard without the risk of curdling. Simply place the custard mixture in a heatproof bowl set over a saucepan of simmering water.
  • Chill the custard before serving: Chilled custard is thicker and more flavorful than warm custard.
  • Serve the custard with your favorite toppings: Custard can be served with a variety of toppings, such as fresh fruit, berries, whipped cream, or caramel sauce.

Conclusion:

Custard is a delicious and versatile dessert that can be enjoyed by people of all ages. It is a great way to use up leftover milk and eggs, and it can be easily customized to your own taste. Whether you prefer a simple custard or one that is flavored with chocolate, vanilla, or fruit, there is sure to be a custard recipe that you will love. So next time you are looking for a sweet treat, give custard a try!
