Time 2h35m

Yield 6 servings

Number Of Ingredients 10

6 cups blackberries
1 cup granulated sugar
1 teaspoon pure vanilla extract
1 teaspoon lemon zest plus 1 tablespoon lemon juice
One 14.1-ounce box refrigerated rolled pie crusts (2 crusts)
All-purpose flour, for dusting
1/4 cup cornstarch
1 tablespoon unsalted butter, cut into small pieces
1 large egg, lightly beaten
1 tablespoon turbinado or raw sugar

Steps:

  • Toss together the berries, granulated sugar, vanilla and lemon zest and juice in a large bowl. Let stand at room temperature for 20 minutes.
  • Preheat the oven to 400 degrees F.
  • Meanwhile, unroll one pie crust and press it into a 9-inch pie plate. Roll out the other crust on a floured cutting board. Using a 2-inch round biscuit cutter, cut the entire crust into rounds, rerolling until all the dough is used (about 28 rounds).
  • Sprinkle the cornstarch over the berry mixture and toss to combine. Pour the berry mixture into the crust and spread into an even layer. Dot the top with the butter pieces. Brush the border of the dough lightly with the egg wash. Place the rounds around the border of the pie plate, overlapping them slightly and using the egg wash as an adhesive when necessary. There will be empty space in the center. Crimp the edge of the pie. Brush the entire crust with the egg wash and sprinkle with the turbinado sugar.
  • Put the pie plate on a baking sheet and bake until the center is set and the crust is golden brown, 45 to 50 minutes. Put on a wire rack to cool completely. Serve at room temperature.

FROZEN STRAWBERRY PIE

Frozen Strawberry Pie image

This is all about strawberries with raspberries as a backup singer. I love them both but raspberries can make a strawberry come to life. The tang of the cream cheese mixed with the rich cream and sweetened condensed milk makes such an easy pie filling. It's like a distant cousin of the key lime pie and this one is frozen so it doesn't need the ice cream or even whipped cream to go with it.

Time 7h20m

Yield 8 to 10 servings

Number Of Ingredients 13

4 tablespoons (1/2 stick) unsalted butter, melted, plus additional for greasing
1 1/2 cups graham cracker crumbs (from about 10 full sheets of graham crackers)
2 tablespoons granulated sugar
1/2 teaspoon ground ginger
2 cups heavy cream
4 ounces cream cheese, softened
1 (14-ounce) can sweetened condensed milk
2 large lemons, 1 zested, both juiced
1 teaspoon kosher salt
1 pint raspberries, lightly crushed
1 pint strawberries, hulled and quartered
1 tablespoon dark brown sugar
1 teaspoon apple cider vinegar

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Butter the bottom and sides of a 10-inch pie dish and set side.
  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, ginger and melted butter. The texture should resemble wet sand. Press the crumbs into an even layer in the bottom and up the sides of the pie dish. Use the bottom of a measuring cup or glass to pack the bottom crust firmly. Bake until the crust firms up and browns lightly, 10 to 12 minutes. Remove from the oven and set aside on a rack to cool completely.
  • For the filling: In the bowl of an electric mixer fitted with the whisk attachment, whip the heavy cream to stiff peaks. Transfer to a medium bowl and refrigerate.
  • In the same mixing bowl of the electric mixer fitted with the paddle attachment, beat the cream cheese on medium speed until smooth. Slowly pour in the condensed milk and continue to mix until incorporated and smooth. Add the lemon zest and juice and salt and beat on medium-high speed until combined, 1 to 2 minutes. If necessary, transfer the mixture to a large bowl to allow for the whipped cream. Use a rubber spatula to fold the raspberries into the filling mix, then fold in the whipped cream.
  • To assemble: Spoon the filling into the completely cooled crust. Freeze the pie for at least 6 hours, up to 12 hours.
  • For the topping: In a medium bowl, toss the strawberries with the brown sugar and vinegar. Remove the pie from the freezer, top with the strawberry mixture and serve.

Tips for Making the Best Strawberry Black Tie Pie:

1. Use Fresh, Ripe Strawberries: Fresh, ripe strawberries deliver the most intense flavor and sweetness to your pie. If you can't find fresh strawberries, frozen strawberries can be used as a substitute. Just be sure to thaw them completely before using. 2. Macerate the Strawberries: Macerating the strawberries in sugar draws out their natural juices, resulting in a more flavorful filling. Allow the strawberries to macerate for at least 30 minutes, or up to 2 hours, before assembling the pie. 3. Use a High-Quality Chocolate: The chocolate is a key flavor component in this pie, so it's important to use a high-quality chocolate that you enjoy. Semi-sweet or bittersweet chocolate works well, but you can also use dark chocolate for a more intense flavor. 4. Temper the Chocolate: Tempering the chocolate ensures that it melts smoothly and evenly. This will give your pie a beautiful, glossy finish. To temper chocolate, melt it in a double boiler or microwave until it reaches a temperature of 115°F (46°C). Then, remove it from the heat and stir it until it cools to 88°F (31°C). Finally, return it to the heat and stir until it reaches a temperature of 95°F (35°C). 5. Chill the Pie Thoroughly: After assembling the pie, chill it thoroughly in the refrigerator for at least 4 hours, or overnight. This will allow the filling to set and the flavors to meld together.

Conclusion:

The Strawberry Black Tie Pie is a stunning and delicious dessert that is perfect for any special occasion. With its combination of fresh strawberries, rich chocolate, and creamy vanilla, this pie is sure to impress your guests. Follow the tips above to ensure that your pie turns out perfectly. Enjoy!
